Cream of Celery Root Soup

I had never used a celery root until I made this soup! I was surprised on how delicious and easy it was to prepare. So give cream of celery root soup a try in your kitchen!



  • 3 tablespoons butter
  • 2 1 pound celery roots, peeled, cut into 1 inch pieces
  • 2 medium onions, chopped
  • 1 cup chopped celery
  • 1 teaspoon sea salt
  • 2 garlic cloves, minced
  • 1 teaspoon celery salt
  • 1/2 teaspoon freshly ground pepper
  • 1/8 teaspoon cayenne pepper
  • 5 cups chicken or vegetable stock
  • 1 cup cream or coconut milk
  • Chopped fresh chives or celery leaves


  1. Melt butter in heavy large saucepan over medium heat.

  2. Add celery roots, onion, celery and sea salt. Let cook for 3 minutes then add in celery salt, pepper and cayenne pepper. Cover and cook until tender, stirring occasionally, about 15 minutes.

  3. Add garlic and let cook for 1 minute then add stock and bring to boil. Reduce heat and simmer until vegetables are very tender, about 15 minutes.

  4. Puree soup in blender in batches until smooth. Return to saucepan. Add cream. Simmer until thickened to desired consistency, about 5 minutes.

  5. Ladle soup into bowls. Sprinkle with chives and serve.
