Cinnamon Apple Ciafouti

I had an extra Gluten Free pie crust in my freezer and this recipe was born!  My husband thinks I am bored in Massachusetts during the Christmas season but it really is too cold to be outside so cooking and baking has helped keep me warm.

This is really good!  You need to try it..  


  • 1 prepared pie crust
  • 3 large red apples (I used honey crisp)
  • 2 tablespoons unsalted butter
  • 1/4 cup coconut sugar
  • 4 large eggs
  • 1 1/2 cups heavy cream
  • 3 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 1/8 teaspoon kohser salt


  1. Preheat oven to 350 degrees.  Place prepared pie crust on a baking sheet.

  2. Peel and thinly slice apples.  In a sauté pan over medium heat add butter.  Once melted add in coconut sugar then apples.  Cook for 7-10 minutes; until soft.  Place apples along with butter and sugar on the bottom of the pie crust.  

  3. In a mixing bowl whisk in eggs, cream, cinnamon, vanilla and salt.  Pour over the apples.  Bake for 30 minutes.  

  4. Enjoy warm or room temperature.
