Cindy’s Drunken Peaches

  • 3 peaches, sliced in half
  • 3 cups red wine
  • 4 tablespoons sugar
  • 3 tablespoons brandy
  • 1 cinnamon stick
  • 1 teaspoon butter
  • 2 tablespoons white almonds
  • 2 tablespoons dried cherries
  • Cinnamon to garnish

  1. In a large bowl pan add wine, sugar and brandy. Stir until sugar is dissolved.

  2. Take a large saucepan that will fit all of the peach comfortably but tight enough so they don’t move around. Pour wine mixture over the peaches and add cinnamon stick. If the liquid does not cover the peaches then add water. Just enough to cover the top of them!

  3. Bring the liquid to a boil then lower to medium/low and cook for about 20 minutes until the peaches are slightly soft (not mushy).

  4. Remove from pan and let cool.

  5. In a small sauté pan add almonds and cherries with 1 teaspoon butter over medium heat for just a few minutes until cherries start to soften. Remove pan from heat.

  6. Take your dessert plates and add a half of peach and pour some of the wine mixture then top with almond and cherries.

  7. Sprinkle a little cinnamon then serve!
