Chocolate Chip Cannoli Cookies

I love cannoli's!  Let's just start there.  I remember when I was little my Nana and I would spoon out all of the ricotta filling from the shell of the cannoli and would laugh like little kids.  I really miss her especially around the holidays.  I just hope I am as good as a grandmother as she was to me!

I came up with these cookies as it has the ingredients as a cannoli but in the form of a cookie.

Please enjoy and Merry Christmas xo

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 (1 stick) unsalted butter, softened at room temperature
  • 1/4 cup whole milk ricotta, at room temperature
  • 1 orange zest
  • 1 cup coconut sugar
  • 1 teaspoon finely grated orange zest
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 3/4 cup chocolate chips, enjoy life mini's work great

  1. Heat  oven to 350°F. Line 2 large baking sheets with parchment.

  2. In a medium bowl sift flour, baking soda, baking powder and salt.  Whisk together to incorporate.

  3. In another bowl using your hand mixer beat the butter and ricotta on medium-high speed until light and fluffy. Add the sugar, orange zest, and vanilla and continue mixing with the blender. Add in egg and beat until incorporated.

  4. Add the flour mixture and lower speed to mix together.  Fold in the chocolate chips.   Drop the batter by rounded tablespoons about 2 inches apart on the prepared baking sheets. Bake until the cookies are light golden, about 15 minutes. Let the cookies cool on the sheets on racks for 5 minutes before transferring them to racks to cool completely.

  5. Store at room temperature or freeze in an airtight container.  Thaw to enjoy!
