Chocolate Caramel Nut Bars

It's after Christmas and looking at my leftover ingredients and decided to make this paleo dessert!  I am enjoying more and more of these desserts lately and so is my family.  i am not big on desserts (which includes chocolate) but having a little bite with my espresso seems to be a pretty nice way to end my day!

I hope you enjoy this dessert.  

Just remember when making the caramel - DO NOT walk away and take a phone call or let the dog out!  Stay close with your wooden spoon.



  • 2 cups almond flour/meal
  • 1/2 cup arrowroot powder
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup pecans, chopped
  • 1/4 cup walnuts, chopped
  • 1/2 cup enjoy life chocolate chips
  • 1/2 cup coconut sugar
  • 1/2 cup coconut cream


  1. Preheat the oven to 350 degrees F.

  2. Combine the almond flour, arrowroot powder, salt, vanilla, 1/4 cup pure maple syrup, and 1/4 cup melted coconut oil in a large bowl.  Stir with a wooden spoon  until a dough forms.

  3. Brush an 8x8 glass baking dish with a little melted coconut oil.  Add dough to the dish and press to create an even layer.

  4. Top with pecans, walnuts and chocolate chips.

  5. Add coconut sugar, coconut cream to a sauce pan over medium heat.  Let cook until all melted and thick.

  6. Bring to a boil and then simmer 10 minutes until the mixture start to caramelize. Stir often with a wooden spoon. (stay close to the pan)

  7. Pour the caramel over the toppings.

  8. Bake for 20-25 or until the caramel is bubbling.

  9. Allow to cool before you cut into pieces and serve.
