Chicken Parmesan

My family loves when I let them know we are having Chicken Parmesan for dinner! It's funny because many times when we go out to dinner my husband will order Chicken Parmesan then say, "that is not as good as your".  I always ask him why he orders it when we both know he won't like it!

I love my chicken very thin for cutlets and therefore for parmesan.  I hope you love my chicken parmesan.  It's so easy to make your own tomato sauce - here is my recipe!

  • A big pot of Italian Tomato Sauce
  • 4 boneless and skinless chicken breast
  • Kosher salt
  • Freshly ground pepper
  • 2-3 large eggs
  • 1 cup Italian seasoned bread crumbs
  • Olive oil
  • 2 cups Mozzarella cheese, shredded

  1. Simmer your tomato sauce on the stove.

  2. ake your chicken breasts and cover with plastic wrap.  Using your mallet and pound your chicken thin (about 1/4 inch).  Set aside and season both sides with salt and pepper.

  3. Preheat oven to 350 degrees.  Ladle sauce in a baking dish enough to cover the bottom.

  4. Take out 2 large bowls or plates.  Whisk eggs in one bowl/plate and add the Italian seasonings to the other.  Dip each chicken piece in the egg then coat with the breadcrumbs.  Stack on a plate.

  5. Heat a large sauté pan over medium-high heat.  Add in a few tablespoons of oil and let it get very hot.  Carefully add in chicken (maybe 2 per pan) without over crowding (do in batches) and cook each side for about 2-3 minutes; until golden brown.  Place each one in your prepared baking dish.

  6. Ladle more tomato sauce over the chicken then top with mozzarella cheese. Bake for 35 minutes.  Let rest for a few minutes then serve.  Add more sauce over the chicken parmesan before serving or serve sauce in a bowl and spoon for individual serving.
