Cauliflower Tacos

As I have been surprisingly on several cauliflower recipes a taco was inspired while walking through the farmers market and watching everyone eating various tacos!  This was experimenting yummy!!!!

Ingredients

  • Coconut oil
  • 1 small head cauliflower, cut into florets
  • 1 package (4 ounces) fresh mushrooms
  • 1 package low-sodium taco seasoning
  • 2 tablespoons all natural salsa
  • Taco shells or corn chips
  • ------Toppings------
  • Salsa
  • Guacamole
  • Grated Mexican cheese
  • Sour cream
  • Black olives
  • Scallions
  • Shredded lettuce
  • jalapeños

Directions

  1. After you cut the cauliflower into florets add to your food processor.  Process until you have the resembling of rice.  Do in batches, set aside in a bowl.

  2. Finely chop the mushrooms (or pulse in the food processor until finely chopped) and combine into the bowl with the cauliflower.   Add taco seasoning and salsa in the bowl and mix well. 

  3. Heat a large sauté pan over medium high heat.  Add in about 1 tablespoon of coconut oil and let it get vert hot.  Add in cauliflower and mushroom mixture and cook for about 10 minutes.  If it starts to dry out add in more oil.  

  4. Prepare your taco to build or put in a large bowl and layer with your favorite topping and use the corn chips to dip.  Yummy!!!
