Cajun Pulled Pork

Ingredients

  • 1 (5) pounds pork shoulder or butt roast
  • 2 tablespoons Cajun seasoning (recipe below)
  • 1 large yellow onion, chopped
  • 6 garlic cloves, minced
  • 4 cups water
  • 1 cup apple cider vinegar
  • 1/2 cup homemade ketchup (recipe below)
  • Your favorite fixings
  • Cajun Seasoning Ingredients
  • 3/4 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 1/4 teaspoons dried oregano
  • 1 1/4 teaspoons dried thyme
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon red pepper flakes (optional)

Directions

  1. Preheat slow cooker. Take the roast and rub all over with the Cajun seasoning.

  2. To the bottom of the slow cooker add the onions and garlic. Top with the roast. Then pour in water, apple cider vinegar and ketchup.

  3. Cook on high for 6 hours, or until the meat falls apart when pierced with a fork. Remove from slow cooker and reduce to low if you are serving the same day. (See cooks notes below).

  4. Shred pork and return to slow cooker until ready to serve.

     

  5. Directions for Cajun Seasoning:

    Combine all ingredients together.

    Note: You can keep seasoning in a sealed container for 3 weeks.
