Cabbage and Cauliflower Fried Rice

Doesn't eating well make you feel so good!  I know we all like to sneak something bad then you hate how you feel.   So, why do we punish our bodies.  I love cooking my own food and enjoying the flavors.

This has become a favorite and it is so easy to make!  I hope you enjoy this dish too and try my Paleo Scallion Pancakes with this!  So yummy... xo

 

Ingredients

  • Oil for cooking
  • 2 cups cabbage, chopped
  • Salt and Pepper
  • 1 bag frozen riced cauliflower
  • 1-2 carrots, diced
  • 1 cup petite peas, frozen
  • 1 teaspoon sesame oil
  • Soy sauce or Coconut aminos
  • 2 large eggs

Directions

  1. Heat your cast iron pan over medium heat.  Add in about 2 tablespoons of oil then toss in your chopped cabbage,  Lightly season with salt and pepper.  Let cook for about 5-7 minutes; until the cabbage get a little tender.  

  2. Add in cauliflower and carrots.  Let cook for about 5 minutes then toss in the peas.  Let cook for about 5 minutes while using a metal spatula to move the vegetables around in the pan.  

  3. Use a spoon and move all of the vegetables to the side of the pan while creating an open space in the center of the pan.  Add about 1 teaspoon of sesame oil and drizzle about 1 teaspoon or more of soy sauce around the vegetables.

  4. Crack each egg in the middle of the pan.  Let it start to cook for about 1 minute then take the spatula and start to incorporate the egg into the vegetable mixture.  Let cook for another minute and add your desired about of soy sauce.  Serve in a small bowl.
