Butternut Squash Soup

You always know fall is in the air when a pot of butternut squash soup is on the stove.  I love this one-pot soup is amazing and freezes really well.

I used my bialetti pot and niinja blender to make this comforting soup!

Ingredients

  • 1 medium butternut squash
  • 2 carrots, chopped
  • 1 quart chicken stock or more
  • 3/4 cup cream
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper

Directions

  1. Peel and chop butternut squash and put in pan covered with water.  Boil until fork tender.  Drain and put back in the pan.  Add in chicken broth.

  2. Carefully puree the soup in batches in a blender then place back into the pan.  Set heat to a medium-low.

  3. Stir in cream, nutmeg, ginger, allspice, salt and pepper.  Let cook together for about 10-15 minutes.

  4. Ladle into bowls and enjoy!
