Brussels Sprouts Slaw

5.0/5 rating (2 votes)

We love brussels sprouts in my house! I have so many recipes and trying to get all of them up on my site. These are delicious and you can be extremely creative. You can prepare them following a paleo diet, gluten free diet or anyway that makes you happy! Enjoy…

  • 2 pounds Brussels Sprouts, wash and trimmed
  • 1/2 pound bacon, thick sliced
  • 1 garlic clove, minced
  • 1 lemon, zest
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1/4 cup olive oil
  • 1/4 teaspoon freshly ground pepper

  1. On a board cut your bacon into cubes

  2. Take a large sauté pan and heat to medium. Add add bacon and cook until crispy. Put on a plate, leave pan as is for now.

  3. Using a sharp chefs knife thinly slice the brussels sprouts, place in a bowl.

  4. In a small bowl whisk together garlic, lemon zest, lemon juice, apple cider vinegar, dijon mustard, olive oil and pepper.

  5. Reheat the sauté pan to medium heat. Add the brussels sprouts and sauté for 2 minutes flipping them around. Then slowly add the oil mixture to the pan combining all of the ingredients together with a wooden spoon.

  6. Add the bacon back into the pan until heated through.

  7. Serve immediately for warm or you can serve this cold as well.
