Bowtie Pasta with Shrimp and Spinach

This is a great party recipe that will be enjoyed by all.  I love using frozen cooked shrimp for this pasta dish.  This pasta salad is great way to use up fresh vegetables you have cut up in your refrigerator.  Add your favorite fresh herbs!

 

Ingredients

  • 1 pound bowtie pasta
  • 1 pound medium shrimp, peeled, deveined and, cooked (thawed if frozen)
  • 5 cups baby spinach
  • 2 cups cherry or grape tomatoes, sliced in half
  • 1/4 cup or more of extra virgin olive oil
  • 2 tablespoons balsamic dressing
  • 1 teaspoon sea salt, plus more for pasta
  • 3/4 teaspoon freshly ground pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • Fresh parsley

Directions

  1. Boil water and cook pasta in salted water by following cooking instructions on the box.

  2. Drain pasta in a large colander then toss in shrimp and spinach on the pasta and toss around.

  3. Add to a large bowl. Toss in tomatoes then stir in olive oil and balsamic dressing. 

  4. Season with salt, pepper, basil, thyme, garlic powder, red pepper flakes and chopped fresh parsley.

  5. Cool in refrigerator for 30 minutes or serve room temperature.

    Chefs Note:  You can also add in crumbled feta cheese!
