Best Homemade Sloppy Joes

Remember childhood sloppy joes… This is so much better and perfect for after school snacks. You can just serve on your favorite buns, over spaghetti or grilled vegetables for a paleo option.  

Anyway you decided will be great.  Just double the recipe to feed a crowd.

Cindy's Tip!  Make ahead and just keep warm in your slow cooker to enjoy anytime.  We love to keep this on the counter at our lake house.  The kids can serve themselves when they are hungry!  Yummy

 

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 1/2 poundsground beef
  • 1 medium size carrot, small cubes
  • 1 small onion, finely chopped
  • 1/2 medium-size green bell pepper, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1 (8-oz.) can tomato sauce
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoons chili powder
  • 1 teaspoon dried thyme
  • 1 tablespoon unsalted butter

Directions

  1. In a large sauté pan over medium-high heat and add 1 tablespoon of olive oil then ground beef.  Sauté until brown. About 10 minutes. Remove meat using a slotted spoon into a bowl.  Set aside!

  2. Wipe pan with paper towel to remove any fat.   Heat pan over medium heat then pour in remaining olive oil.  Add in carrots, onion and peppers. Sauté for 3-4 minutes.  Season with salt and pepper then add in garlic.  Continue cooking for another minute.  

  3. Pour in tomato sauce, ketchup, Worcestershire sauce, cider vinegar, brown sugar, chili powder and dried thyme.  Stir together to incorporate all ingredients.  Bring to a simmer. (about 5 minutes)

    Lower to simmer and cover for 10 minutes.  Add in butter and stir around.
