BBQ Shrimp Tacos with Avocado Lime Coleslaw

When you think about BBQ sauce I know the first thing to mind is chicken, pork or beef brisket.  We decided to make some yummy BBQ Shrimp Tacos and serve with an Avocado Lime Coleslaw to bring it all together.

Ingredients

  • 1 pound large shrimp (peeled and devained)
  • BBQ sauce (sweet, honey or hot)
  • 1 bag pre-packaged shredded coleslaw (cabbage)
  • 1 small purple cabbage, shredded
  • 1/2 cup shredded carrots
  • 1 bunch green onions, sliced
  • 1/2 bunch cilantro, chopped
  • -----Sauce-----
  • 1 avocado
  • 1/2 cup Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 limes, juiced
  • 1 tablespoon extra virgin olive oil plus extra for cooking
  • Tortillas (taco sized)

Directions

  1. Place shrimp in a bowl and pour about 1/2 cup to cover evenly.  Reserve about 3 tablespoons to add more after you cook he shrimp.  Set aside

  2. In a large bowl add in shredded cabbage, purple cabbage, carrots, green onion and cilantro.  Set aside.

  3. Add avocado in your food processor.  Add in Greek yogurt, apple cider vinegar, garlic, salt, pepper and lime juice.  Blend to combine then add in olive oil.  Taste for additional salt or pepper.  Toss mixture into the coleslaw.  Cover and set aside or refrigerate until ready to serve.

  4. Heat a sauté pan over medium-high heat.  Coat with about 2 tablespoons of olive oil.  When the oil is hot add shrimp.  Sauté for about 3 minutes.  Before you remove from the pan add in remaining bbq sauce and toss around the pan.

  5. Warm tortilla then add a big scoop of coleslaw then top with 3 shrimps and enjoy!
