BBQ Shrimp and Cauliflower Rice Bowl

We love a quick, easy and delicious meal in a bowl. 

Take our shortcut and pick up frozen riced cauliflower.

Ingredients

  • 2 tablespoons oil
  • 1 bag riced cauliflower
  • Salt and Pepper
  • 3 cloves garlic, minced
  • 1/2 bunch cilantro, finely chopped
  • 1 pound shrimp, peeled and devein
  • 1/2 cup BBQ sauce (sweet, honey or hot)
  • 1 avocado, peeled and sliced
  • 2 cups baby spinach
  • 1 can black beans, rinsed and drained
  • -----Sauce-----
  • 1 cup sour cream
  • 2 limes, juiced
  • 1 tablespoon apple cider vinegar
  • 1/8 teaspoon salt

Directions

  1. Heat a sauté pan over medium heat then add in oil.  Toss in riced cauliflower (frozen or thawed) and season with salt and pepper.  Add in garlic and cook until warmed through.  Toss in cilantro then cover and set aside.

  2. Toss shrimp in a bowl and add in most of the BBQ sauce (reserve a few tablespoons).  

  3. Heat a large sauté pan over medium heat.  Add in oil then toss in shrimp.  Cook for about 3-4 minutes.  Before removing from the pan add in a little more BBQ sauce and toss around.

  4. In a bowl whisk sour cream, lime juice, apple cider vinegar and salt together.

  5. To create your bowl.  Add a big scoop of cauliflower rice to the bottom of the bowl.  Then in quarters of the bowl add in avocado slices, spinach, beans then add as many shrimp to the top.  

  6. Drizzle with sauce and enjoy!
