Basil Infused Fried Tomatoes

My friend Rosemarie gave me a beautiful planter of fresh basil and this recipe just happened in my kitchen.


  • 6 leaves basil
  • Extra-virgin olive oil
  • 1/2 cup Italian seasoned bread crumbs
  • 1 large egg
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
  • 1 large red tomato, thinly sliced (about 6 slices)


  1. Take 4 leaves of basil and add to a heated pan over a medium temperature.  Add in about 2 tablespoons of olive oil.  Let it get very hot then remove basil leaves.

  2. Take a plate and add in bread crumbs.  Whisk egg in a bowl and season with salt and pepper. 

  3. Dip each slice of tomato in the egg then coat both sides lightly with bread crumbs.  Place in the pan for 1-2 minutes per side.  Place on a plate and do in batches.  Take remaining basil leaves and break apart on the fried tomatoes and enjoy immediately.  

    Eating with your fingers in acceptable!
