Banana Protein Pancakes

I just love pancakes and these are so easy and fluffy!  Really..... Give these paleo pancakes a try!  So yummy.....

PS:  Try adding a little almond butter in them too!



  • 2 bananas
  • 2 large eggs
  • 1 scoop vanilla protein
  • 1/4 cup tapioca flour
  • 1/4 teaspoon sea salt
  • 1/4 cup unsweetened chocolate chips or blueberries
  • Unsalted butter, ghee, or coconut oil for pan


  1. In a mixing bowl add bananas and mash well using a fork.  Add in eggs and whisk into the bananas.


  2. Add in protein, flour and to combine into the batter.


  3. Fold in chocolate chips or blueberries (or keep just the batter).


  4. Heat a grill pan to medium-high and coat with butter, ghee or coconut oil.  


  5. Once very hot add in a 1/4 cup of batter to the pan.  Cook for about 2 minutes on each side or until brown.


  6. Add more butter, ghee or oil as needed. Top with maple syrup.
