Banana Protein Crepes

Getting ready for my HEWfit Challenge and wanted to test out a new recipes.  I am thrilled because my husband even loved them.  At first I was planning on making pancakes but due to the consistency of my batter they were perfect crepes.

I used protein from my friends at Inner Amour.

The next time make them I am adding blueberries in the batter.

I batch made 4 crepes.

Enjoy!

Ingredients

  • 1 banana, ripe
  • 2 large eggs
  • 1 tablespoon almond butter
  • 1 scoop vanilla protein
  • Coconut oil

Directions

  1. I used my bullet but a blender will work fine.  Just add all of the ingredients and blend.

  2. Heat a large sauté non-stick pan over medium high heat. Add in some coconut oil the ladle out batter and cook on the first side for about 2-3 minutes than flip and cook for another 2 minutes.

  3. Top with fresh fruit!  

    One of the crepes fell apart when I flipped but pressing back together was easy and it still looked perfect. Enjoy with a fresh cup of espresso.
