Banana Chocolate Espresso Breakfast Cake

OK..  I need to admit something before I continue. I am addicted to Wild Friends Vanilla Espresso Almond Butter and can't stop consuming it!  It all started with my lava cakes and my daily smoothies.  

You can make this recipe as cupcakes, a loaf or what I did - use a cake pan and enjoy with your friends and a cup of tea.

 

 

Ingredients

  • 1 tablespoon coconut oil, melted
  • 3 ripe bananas
  • 1/4 cup coconut sugar
  • 1/4 cup coconut flour
  • 1 teaspoon instant espresso powder
  • 1/8 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 3 large eggs, whisk
  • 1/2 teaspoon baking powder
  • 1/2 cup almond butter or vanilla espresso almond butter
  • 1 teaspoon vanilla
  • 1/4 cup mini chocolate chips, enjoy lif

Directions

  1. Preheat oven to 350 degrees F.  Lightly brush your cake pan with coconut oil.

  2. In a large mixing bowl mash bananas with a fork then mix in coconut sugar, coconut flour, espresso powder, salt, baking soda and baking powder.  Mix well with a fork.

  3. Add in whisked eggs then combine almond butter and vanilla.  Fold in mini chocolate chips.

  4. Bake for 27 minutes or until a toothpick comes out clean.  Slice and enjoy warm!
