A Big Paleo Protein Cookie with Nuts and Dried Fruit

A Big Paleo Protein Cookie with Nuts and Dried Fruit

I wanted to make a snack "cookie" that hubby and I could share after our walk on the beach with Jake.  I could have made more cookies but I thought one big one was kind of romantic to share!  You will make 2 large cookies with this recipe.

Enjoy my paleo cookie!

 

Ingredients

  • 2 cups almond meal
  • 2 tablespoons vanilla protein
  • 1/4 cup flax seeds
  • 1/2 cup coconut sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 2 large eggs
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 sliced almonds

Directions

  1. Preheat oven to 350 degrees F.  Line a large baking sheet with parchment paper.

  2. In a mixing bowl add in almond meal, protein, flax seeds, coconut sugar, baking soda, salt and cinnamon.  Stir together with a fork to incorporate well end smooth out any lumps.

  3. Stir in pumpkin seeds, sunflower seeds and cranberries.

  4. Whisk the 2 eggs in a small bowl then add into mixture along with the cooled coconut oil and vanilla. Use a spatula and stir to combine well.

  5. Divide the batter in 1/2 and form each into a disk and place on the baking sheet. Use the palm of your hands to form 2 large cookies.  Top each one with the thinly sliced almonds.

  6. Bake for 13-16 minutes; until the cookie is brown.  Let cool for a few minutes then enjoy!
