This Apple and Chestnut Stuffing is really delicious. I made it to go with my apple spice pork tenderloin and the flavors were perfect together.

To make this a paleo recipe just omit the stuffing and add cubed sweet potatoes! I also Like to use my Olivia’s Croutons - traditional style stuffing! So yummy….

This blue cheese and honey soufflé was amazing! My husband loves blue cheese and we were having company for dinner and I want to add something else to our steak dinner. You can make my Italian Sausage and Mushroom Stuffing a Paleo Recipe by omitting the stuffing mixture. I love Olivia’s gluten free stuffing mix and only use 2 cups. They also have traditional and cornbread but either way we give their products a A+

I like combing a few different types of mushrooms. Can be prepared in advance. Cook the mushrooms and set aside covered. Heat pan then just add wine and heavy cream about 15 minutes before serving.

We have Mexican nights every couple of weeks and I marinated some flank steak and prepared all of the fixings (avocado, salsa, shredded lettuce) and wanted to make some Paleo Spanish Rice. We really enjoyed this and I never told the family it was cauliflower until the bowl was empty! Love paleo recipes!!

***How to rice cauliflower: Cut the head of cauliflower in 1/2 (put 1/2 away). Then cut in half again and cut out the core. You can then either feed florets through the shredder attachment to your food processor, or use a box grater to achieve a rice-like consistency.

My kids, my friends and everyone else in better love my Paleo Yorkshire Pudding! The perfect side to a roasted chicken, prime rib or what ever your little heart desires for those happy faces at the dinner table!

The best way to do this is – adding the ingredients in your blender; let it sit for 10 minutes or until your oven is preheated.  Remember a few basic rules about making yorkshire pudding or popovers.  Sorry – but yes there are rules!

I was told a long time ago that there are three criteria for successful Yorkshire pudding or popovers

  1. You must be in a good mood
  2. Do the dance before you pour the mixture into the pan
  3. Do not walk in front or open the oven door while cooking
