Lemons, Spinach, and Prawn Soup

The secret to making this creamy soup is that you must put a can of coconut milk in your refrigerator over night. When you open the can, the top will have the cream. Scoop it out and keep aside and use the water liquid for another recipe.

Mixed Seafood in a Tomato Sauce

This dish was created to use up some seafood I had in the freezer.  Sometimes while at City Fish I get extra fish.  It's an Italian thing - Just in case!  We never know if last minute friends are coming over for dinner therefore I always have enough.....  You know just in case!  I freeze what we don't cook up and use.

I love (as you can imagine) tomato sauce and decided to make one but with all of the fish I had handy.  I defrosted the fish earlier in the day.  You can use any seafood you have handy or decide to pick up for this dish!  This goes great with your favorite pasta or spaghetti squash.

Paleo Haddock Fish Cakes

This recipe was so fun to make because I had 1 sweet potato on the counter and 1/2 of a red bell pepper.  I love the flavors of the sweet potato in the recipe and we are just loving this fresh haddock from our friends at City Fish!

I made a baby kale salad to serve these Paleo Haddock Fish Cakes!

Cindy's Tip!  If you are picking up haddock grab a little more and cook it up then save for another meal.  The work is already done and all you have to do is  make the cakes!

Salted Sea Bass

Talk about Sea bass

Enjoy a restaurant style dinner at home with a Paleo Recipe!

Whenever we go out for dinner and I see "branzino" on the menu I order it for my dinner! This is a typical fish from the Mediterranean sea. This fish goes back to our ancient romans who loved sea bass. Sea bass can grow to about 3 feet long but are generally caught while they are still small. If you find this delicious fish on the menu - give it a try! Especially when it is served table side… Makes the experience a little special.

I like to prepare a whole sea bass for this recipe. You can ask while at your fish market to prepare the sea bass (or any other fish) for you but here are the steps to do this at home!

Steps to prepare a whole fish

  • Using scissors trim the fins.
  • Next take a sharp knife and run it along the full length of the belly of the fish starting from the lower end. **For grilling you do not need to remove the scales.
  • Cut at an angle into the back of the head on both sides, and then one cut on the underside. Remove any innards. You can remove the head or not depending on your presentations or desired preparation.
  • Rinse the entire fish using cold water.

To make this sauce I started taking out ingredients from the refrigerator and pantry! This recipe follows the Paleo diet and is a delicious Italian dinner for any weeknight or entertaining.

I used cod loin because it is thicker and I wanted a nice piece over the sauce on each individual plate.

Sauté White Fish and Greens

Meal preparation is easy if you are organized.  I love to make a few meals for the week and have them ready to pull out of the freezer in the morning and just warm to enjoy for dinner.

This recipe is perfect.  I just lightly brown both sides of the fish and slightly cook my greens.  I store in the refrigerator to enjoy within a day or 2 them just warm up in the pan for an easy dinner.

It's really fun to be healthy!

Enjoy xo
