My future daughter-in-law loves quinoa and so do I.  I made this as a side dish with my ham dinner the day after Thanksgiving and everyone was excited to give it a try!  I made sure there was plenty left over for Leia to take some home!

This is such a yummy salad! You can use white, brown or your favorite style rice! You can also substitute with spaghetti squash or zucchini noodles to make this fit your diet or lifestyle if on the Paleo Diet. I make this for lunch when I have my girlfriends over and we all enjoy this dish so much! (So much better than a sandwich).

Give my Rice Salad with Tuna, Capers and Herbs. You can also add cherry tomatoes to this salad – just cut them in 1/2!

Beets have become wildly popular lately! I get so excited when I see a beet salad on a menu or when at a friend's house and they ask, "do you like beets?" I remember being a little girl and being served the canned beets which have no flavor and the texture is not very pleasant. When you roast beets they really come to life and adding my simple Dijon dressing makes this the perfect starter for any dinner party or just because!

 

*CHEFS NOTE* We all think about the dreaded red beet fingers and hands when it comes to beets. I like to take fresh beets and cut the green off as close as I can get to the beet. Then scrub with water and a brush to really get it clean. Then roast and let cool. Once is it cool, the skin should come off very easily with your fingers. I try to go fast so red isn't everywhere but you can also wear gloves. Another way is to peel the beet while under cold water- again going fast!

There are so many ways to enjoy roasted red peppers!  I know you can get them in a jar but grilling them is so easy and taste so much better.  I buy then on sale or at the farmers market and grill all of them and use them many ways throughout the week.  Check out my recipes using roasted red peppers.

*CHEFS NOTE* If you are at your local fish market and smoked salmon is on sale then pick up a little extra then divide and freeze for later! I love surprising my husband with a smoked salmon and scrambled eggs breakfast after a long business trip!

Every restaurant we have been to in Tuscany has their own version of a steak tartar topped with rocket salad. Rocket is known as arugula. A nutritious green leafy vegetable and very popular in the Mediterranean. I love using Rocket in salads or even cooking with them. I love when they are young and have just that slight peppery taste

*CHEFS NOTE* If you have difficult slicing the beef very thin, then place wrapped in the freezer for about 15 minutes then slice. If will be much easier to work with to create the perfect thin slices.

Spring is here and I just love cooking with fresh vegetables.  I love walking through the produce department at Shop Rite as it's always inviting and they also carry organic vegetables and fruit.

My husband I spend the day working out in our yard and we were so excited to enjoy steaks our Big Green Egg.  We just returned from Cabo and it was a great trip but after eating Mexican all week we both just wanted steak and a nice salad. This was a perfect meal for the 3 of us!  Of course we cooked up a steak for Jake too!!  

This can be made a day in advance stored in the refrigerator. 

I should have added caper - I will next time for sure!

Thank you City Fish, Wethersfield, CT for the best salmon!  I just love salmon and enjoying in this salad topped with a dijon mustard dill dressing made it a perfect meal.

This is also a great way to use up left over salmon.  Just make a little extra for dinner!
