Tonight for dinner I am making my Asian salmon with bok choy! Last night I made a roasted chicken so I thought I would also prepare a chicken soup using an Asian twist! I made my own stock and it was super easy using my pressure cooker but you can also use 8 cups of chicken broth!

This recipe was inspired by the Avocado Madness Contest and got me to round 2.  I wanted to keep a Paleo theme and came up with this delicious recipe!  Go ahead and give it a try - It will be a winner at your house too!

It's a little time consuming but worth it!  The recipe starts by making the buns first!

Note: If you do not have a spiralizer you can use your food processor or a box grater and create the same bun by shredding.

 

Baby Kale and Mixed Green salad with Shrimp

I love using baby spinach for the delicate salad. The perfect dish for a break in the middle of the day!

*CHEFS NOTE* A little shopping tip: when cooked frozen shrimp is on sale- make sure you grab a bag! They thaw out easy and quick and go great in a salad in a jiffy.

Don't you love a romantic dinner to share with your spouse or friend?  Of course you do but without the long preparation and big mess to clean up!  This one-pot recipe is a perfect dinner for two and a big smile from the beautiful presentation and the smell will be sensational.

I added kale but you can use any green leaf such as spinach. If you want to add a little heat toss in chopped jalapeños or red pepper flakes.

I just love these chips!  Not to mention the bowl is absolutely beautiful and what a great way to get your kids to eat vegetables!

I love using my mandolin for these chips but you can also use a sharp chefs knife. You may want to rinse the beets and maybe even wear gloves.

Hubby and I love sweet potato fries with our burgers!  However tonight as was I holding 2 thin sweet potatoes I quickly decided to change it up a little.  I took out my mandoline to make chips!  As a little surprise I even made a Paleo sriracha dipping sauce!

My husband loves short ribs and every time we go out to dinner and they are on the menu he wants to try them - just to check if they are better than mine!  I really wish he would stop doing that because he is always disappointed!  I try to tell him to order something else but he never listens...   

I have another great short rib recipe but made this one a little different and we really liked the balsamic glaze.

Tip: Buy a little extra as they are even better the next day!  Also, when at the butcher I like then a little smaller as they fit in the pan better.  If they only have the longer short ribs just ask them to cut in half and will gladly!

This is another great way to use frozen vegetables.  I have a bag of brussel sprouts and cauliflower in the freezer.  Of course we will be frying up some bacon.

OK..  I need to admit something before I continue. I am addicted to Wild Friends Vanilla Espresso Almond Butter and can't stop consuming it!  It all started with my lava cakes and my daily smoothies.  

You can make this recipe as cupcakes, a loaf or what I did - use a cake pan and enjoy with your friends and a cup of tea.

Getting ready for my HEWfit Challenge and wanted to test out a new recipes.  I am thrilled because my husband even loved them.  At first I was planning on making pancakes but due to the consistency of my batter they were perfect crepes.

I used protein from my friends at Inner Amour.

The next time make them I am adding blueberries in the batter.

I batch made 4 crepes.

I wanted to change my breakfast around a little and decided to make these donuts. They are the texture of a soft tea bread.  Really yummy!  At the last minute before I put them in the oven I sprinkled on some unsweetened coconut. That was a great idea..  Yummy....
