If you are strick on the paleo diet then omit the cheese and you can stuff these with avocado, roasted red peppers or any other of your favorite ingredients. Make these once and you will be hooked! Promise! You can serve these with spaghetti squash or your favorite pasta!. It is delicious and I recommend you try them.

Sometimes I create a meatball sandwich with a medium size portabella mushroom and that is a meal you won't forget. Other times I just like my meatballs in a bowl with my homemade sauce and just enjoy every bite!

This make a full batch of meatballs! Just freeze what you don't use. Enjoy.

Yes, I made eggplant meatballs. If you know me – You know I love Eggplant! And – I love meatballs. So I decided to make 2 of my favorites together… Delicious.. I used ground turkey and almond meal but I am giving you alternative suggestions below.

This is a great paleo recipe and very addictive – I like using an ice cream scoop so they are all the same size!  Perfect for entertaining.  Yummy!!

Cindy's Note:  You can use spaghetti squash, rice noodles or even zucchini noodles.  I used linguini just because but also made it again and used spaghetti squash.  Very yummy!!!  

Spaghetti Squash - After I baked the squash and removed the strands then put in a bowl.  I added fresh ginger, salt pepper and chopped cilantro then drizzled a little sesame oil!  Amazing....

Sorry I took the picture before we garnished and ate!  We just couldn't wait.....

If you know me well...  Then you know how much I love my meatballs.  When I make a pot of sauce and meatballs it's normally a large pot.  Even though many Sunday's it's just for my husband and I. However, we LOVE the left overs.  I pack them in several containers and freeze some and keep some handy.

I had some perfect organic peppers and decided to stuff them with meatballs and rice. You can also use cauliflower rice (which is what I did).  You can get the frozen cauliflower rice at Trader Joe's - just love it!  All you need to do is add it to your mix...  If you are using rice (any kind) be sure to cook it first then add to the mixture.

I love quinoa and I know many Paleo followers will say that it's not allowed but I love it!  We don't have it often but I think it's really good for us to eat.  I served these over a quinoa salad full of vegetables then drizzled with EVOO and Balsamic.  Perfect to bring to a summer outing.  That is what I did and everyone loved it.  It went great with my friends Lisa's ribs!
