I wanted to make a snack "cookie" that hubby and I could share after our walk on the beach with Jake.  I could have made more cookies but I thought one big one was kind of romantic to share!  You will make 2 large cookies with this recipe.

It's after Christmas and looking at my leftover ingredients and decided to make this paleo dessert!  I am enjoying more and more of these desserts lately and so is my family.  i am not big on desserts (which includes chocolate) but having a little bite with my espresso seems to be a pretty nice way to end my day!

Just remember when making the caramel - DO NOT walk away and take a phone call or let the dog out!  Stay close with your wooden spoon.

I have a weekly "bring a friend to dinner" and my good friend Leigh comes over and I test out new recipes with her. We have a great time and of course enjoy a good bottle of wine.
