This is certainly a crowd pleaser!  At the lake house during the summer we have busy weekends and I love my One Pot Breakfast!  This is a great paleo breakfast and go ahead and fry up some bacon!  We enjoyed this with my paleo crumpets!

Here's a secret! I always double the recipe and make 2 loaves of zucchini bread. We enjoy one immediately and then freeze the other. When our kids are home for the weekend, or we have guests at our lake house, i can quickly take this out of freeze and make French toast! This is really a gourmet breakfast or brunch to enjoy. I love to add fresh fruit on top then drizzle pure maple syrup.

 

*CHEFS NOTE* You can make the French toast in advance just preheat your oven to 100 F and place on a baking sheet until ready to serve. You can also add crushed nuts to the bread after you dip in the eggs! My granddaughter loves when I grate a little dark chocolate to her zucchini french toast.

Carbonara is an Italian pasta dish from Latium, and more specifically to Rome,based on eggs, cheese (Pecorino Romano or Parmigiano-Reggiano),pancetta (or bacon) and black pepper. Spaghetti is usually used as the pasta, however, fettuccine, rigatoni, or zucchini noodles can also be used.

It’s that time of year when my garden is over flowing with zucchini. I love so many of my zucchini recipes including

Zucchini Scrambled Eggs, but tonight I made Chicken Milanese and I decided to prepare a zucchini carbonara. My guests tonight all loved this carbonara including my lake neighbors who all had a taste! Love sharing my food with everyone…

Zucchini Fettuccine with Cauliflower Alfredo and Peas

If you know me then you should expect peas in my pasta dishes.  I created this dish using many of my favorite combination of vegetables!  This dish is super delicious.  I bet adding chicken or shrimp to this dish would be very good.

Due to my new love for turmeric; I decided to add some into this dish. Yum.

If you are following a vegan diet then omit the bacon and just sauté the zucchini in oil.  Enjoy

This recipe was inspired by our last visit to Tuscany!  I ordered this at our dinner and came home then recreated them for a dinner party we had at our lake house. Of course I sprinkled mine with Parmesan cheese - So did everyone else!  Enjoy..

Zucchini Fritters

There is something about these zucchini fritter that makes everyone around me so happy! I end up making a double batch and freezing them.  I always start by making these as a side dish but the best part is for breakfast. Just warm the fritter in the microwave for under 1 minute and top with a poached egg.

You can also add other vegetables such as a sweet potato, yellow onion or red bell pepper.  This is a great way to use left over vegetables in your refrigerator.

**Cindy's Tip! There are a couple of ways to shred your zucchini.  I use the blade attachment on my food processor or you can use a box cheese grater.  To do this, clean your zucchini, cut off both ends and grate. **

Lasagna is a family favorite and using fresh garden zucchini make this dish light and delicious for everyone to enjoy. This is a great gluten free recipe and perfect Italian dinner!

Use your mandolin to slice your zucchini or a sharp chefs knife.

Check out Chef’s Note below – I also made this recipe breaded for extra crunch. I also made this recipe using ground turkey and it was delicous.

You can also add sauté zucchini or other fresh garden vegetables into your meat sauce.

I made this dish as one of the recipes for a charity event to benefit Place of Hope. We received amazing vegetables as donations and I thought this dish would be perfect.  I wish we grabbed a photo of my friend Suhiel spiralizing an entire box of zucchini!  

You can add poultry or seafood to make this dish hearty or enjoy as is for a perfect side dish or vegetarian option.

This recipes reminds me of a simple dish my Nana and I would make together.  I wish she was still here so I could show her my zucchini recipes.   Her and I loved zucchini together and this dish would be a big hit!

When home alone I still make dinner but just for 1.. Normally I try out new recipes or ingredients that I just love that hubby may not be very interested in trying. Tonight when I returned home from a weekend with my kids in Maine there was a limited amount of choices but I found a zucchini, carrots and everything else I need for a Pad Thai but I decided to use Zucchini for this delicious Paleo Recipe.

I did find 2 chicken cutlets and sauteed them first in a little olive oil and butter after seasoning them with salt and pepper for 3 minutes on each side. Set them aside and used the same pan for my Zucchini Pad Thai.

This was very tasty and I may even make it for hubby!

I made this with Easy Grilled Tuna and it was the perfect combination. I did take out some of the puttanesca mixture before adding the zucchini and topped the tuna.

I have a device that turns zucchini into noodles but you can also use a vegetable peeler or mandolin.

Serving this dish with fresh grilled fish is a perfect combination.  Zucchini  (courgette) can be grilled, fried, sauteed, or eating raw in a salad.  I grew up eating zucchini and eggs for breakfast and now, I just love making pasta with this versatile vegetable!

**Cindy's Tip!--A mandolin works great for creating ribbons but a vegetable peeler is also a wonderful tool in the kitchen.  You may want to discard the first few as it will be the green only from the zucchini's skin **

Zucchini Scrambled Eggs

Zucchinis are a very versatile, low caloric and delicious vegetable. I picked about 4 zucchini from my garden and sautéed them up with my salmon dinner. I quickly packed up the unused zucchini for my breakfast. I remember making zucchini scrambled egg sandwiches with fresh Italian bread with my grandmother and we enjoyed every bite together. This morning I made a big pot so I can snack on throughout the day. This recipe is using left over zucchini. If you want to sauté up the zucchini in a little olive oil, salt and pepper for about 8 minutes they will be ready for your breakfast.

There are so many zucchini right now and I am loving it!  My friend Kathy sent me to her garden as she is traveling and I decided to make these with my dinner.  I grilled up a chicken breast I seasoned with salt, pepper and Italian seasonings then I sautéed up some sliced peppers and onions then cut up an avocado - Dinner for me!  YUM....

Add any of your favorite spices!  You know mine are Italian...  Next time I may add in a few shakes of red pepper flakes.  All I can say is Paleo OMG you are delicious!

Zucchini Spaghetti with Lentil Marinara

I just love lentils and marinara so it was a quick decision to marry the two of them in this zucchini dish!  I love to drizzle my dish with a little extra virgin olive oil then sprinkle some freshly grated parmesan cheese.

Cindy's Note:  Before using the lentils pour into a colander and rinse then go through them with your hands to pick out any bad lentils.

My grandfather had a large garden every year and there was always an abundance of zucchini.  We would enjoy them for every meal of the day.  I just love them anyway, but sometimes I just want it in a simple salad.  This is one of my favorite summer salads when using zucchini.
