My  Paleo Triple Chocolate Cookie Ice Cream Sandwich dessert is a very popular item at my lake house! I like to make these cookies in double or triple batches and freeze and when I want to surprise my family or friends. They are very easy to make up these yummy sandwiches!

I made these recently for some of my Crossfit friends.. All I will say is that there were NONE left over... Yup - We ate all of them!!

I made these are a paleo recipe and also gluten free.

If you want to make these as a traditional recipe - do the following
1/2 cup plus 1 tablespoon - all purpose flour
Change honey to sugar - same measurement
3 Eggs

We love our salmon burgers and Glenn asked me; "what if we made tuna burgers"?  I just loved the idea and went over to City Fish and picked up fresh tuna for these and WOW OMG they were amazing!  Go ahead and give it a try.  I even made an aioli which was perfect!  Enjoy this paleo recipe...   I served with a big salad loaded with vegetables and a seaweed salad!

We used the pan you see in the photo on the grill.  Glenn got the pan really hot and we brushed a little olive oil.  

PS Before I forget to tell you..  Notice in the photo below.  Before I added in the other ingredients I took out some tune to make Jake a burger too!

Turkey and Swiss Chard Meatloaf

I was at whole foods yesterday and spotted the swiss chard! Immediately I thought "stuffed with ground turkey". I purchased all of the ingredients and couldn't wait to make it for tonight. Last minute I changed my mind and decided to use all of the ingredients (and a few more) to create a meatloaf. This is also great for last minute guests and you can form your own, use a loaf pan or a bundt pan (which is something I have done in the past - what a way to Jazz up a meatloaf…

Here is the recipe! This recipe will feed 4 so alter as necessary.

I love these turkey burgers. I recently served them with my pancetta braised cabbage recipe. These paleo recipes go very well together! I used frozen (thawed) spinach and dried herbs to make this burger easy but very favorable! Enjoy

We love our Big Green Egg.  As we are testing new recipes for my new show coming this fall I wanted to make a pasta dish on the Big Green Egg.  I used my 12 inch Lodge cast iron pan.  This was a big hit and this recipe fed 4 adults and 4 kids!

I made this recipe as a gift and the recipient held it close and started to cry!  I feel that a homemade gift from the heart means a lot not only to the person receiving it but the one who made it!  Being in the kitchen makes me happy and that is why I feel that making a gift from my kitchen shares my love!

This is a hearty comfort Paleo dish that travels well and fun to eat!  

I used ground turkey but you can use any ground meat you have handy or love to enjoy!

Cindy's Tip:  You want to fill these leaving about 3/4 inch to the top so you can cover and refrigerate if making these to save for another day.  If you are going to bake and enjoy then you can fill almost to the top.  I also like to line the baking sheet with foil just for easy clean up in case there is some spillage!

It is the end of the week and trying to use up what I have in the refrigerator and had 4 turkey sausages left and a fresh bag of baby spinach. Then I thought about the spaetzle and I added a little Dijon mustard which I thought would be a great flavor to add with the sausage. I put it all together and it really worked and tasted great! It was easy to make and the spinach was steamed right in the microwave!  Looking for a creative dinner then try my Turkey sausage, spinach and spaetzle for dinner!

I love making treats for Jake.  We are getting ready to head up North for the summer therefore it's time to clean out the freezer and pantry.  I had frozen turkey burgers in the freezer along with a bag of frozen vegetables (peas, green beans and carrots).  We had 1 bag left of the rice (about 1 cup cooked) along with 1 can of sweet potato puree.  These made perfect meatballs for my amazing dog. 

He loved them very much!  Give them a try for your doggie.

As I continue on my Turmeric journey this recipe has been born.  I was at the store and found Bob Mills Paleo Baking Flour.  It contains Almond Flour, Arrowroot Starch, Organic Coconut Flour, Tapioca Flour so I thought; let's try it!  I just loved this recipe.  I enjoyed with my turkey and lentil meatloaf and of course made some vegetarian gravy!  Yummy..

Tuscan Bean Soup

I have so many great memories from visiting Tuscany. I have recreated the delicious meals we experienced into my kitchen. This is also a great way to use up leftovers with this popular Italian soup. This soup can also have so many variations and if you have other ingredients in your refrigerator put them in the soup. I like to add baby spinach or escarole at the end if there is some handy!

I received a sample order of Dei Fratelli and knew chicken was on the menu and decided to make a sauce.  What Italian doesn't love a great sauce with Sunday dinner. OMG I can't believe how amazing the tomatoes were and it really made this meal complete.  You will be seeing many new recipes using their products.  

I have my new Tuscan blend coming out and since you don't have it yet here are the spices to use until you get it for your cooking. (this is not my blend but a good blend for you to use.  I am not giving out my secret just yet)

Tuscan Blend

  • 2 teaspoons dried marjoram
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
