Thanksgiving Open Faced Paleo Sandwich

First let me apologize!  My future daughter-in-law and I were so excited about making this that we forgot to take photos.  We were enjoying red wine, cooking up left overs and talking about theirs wedding.  My baby will be getting married in 2018 and I just can't believe it!  So, next time I make this we will take photos but until then I hope the recipe is good enough to walk you through.  Believe me it was delicious.  Enjoy xo  Cindy

I really love Thanksgiving!  The best part is having my family together and the kids in the kitchen with me cooking and baking.  We all love the feast enjoyed together!  However, we all talk about left overs during dinner and what we will be doing with the turkey.  

Of course there has to be a turkey pot pie, turkey hash with poached eggs for breakfast and this year I am making this new recipe an Open Faced Paleo Sandwich!

Turkey talk: If the turkey has been refrigerated, bring it to room temperature before cooking. Keep it in its plastic wrapping until you are ready to cook it. While in the refrigerator, and or while you are bringing it to room temp, have the bird resting in a pan or large dish, so that if the plastic covering leaks for any reason, the juices will stay in the pan/dish and not make a mess. If you are using a frozen turkey, you will need to defrost it in the refrigerator and it can take 3 days. Allow approximately 5 hours of defrosting for every pound.

Handle a raw turkey with the same amount of caution as when you handle raw chicken - use a separate cutting board and utensils to avoid contaminating other foods. Wash you hands with soap before touching anything else in the kitchen. Use paper towels to clean up.

Some of you may call this a NorCal or a Skinny Margarita. For my husband and I this is The Perfect Margarita. We have been to several parts of Mexico. One of our visits including a drive to the original Tequila Sunrise and after several versions we just love this one the best.

This is also similar margarita that will you may on many Paleo sites. Even thought the cavemen didn't have Tequila this seems to be the drink of choice in the Paleo community! I just love them because they taste really good and when we entertaining - there are a lot of smiles when making The Perfect Margarita! Enjoy..

However, when we can find Damiana (the bottle is a pregnant woman) we certainly use it. You only need a little but it makes this Margarita just Amazing! We brought some back from Mexico and have been able to order it from Yankee Spirits in Sturbridge, MA.

This recipe is per drink - We like to make them in a shaker the pour into our glass! You can also make a big bowl for your guest to enjoy!

Poached eggs are my favorite for breakfast, over a burger or on a salad.

To me the perfect poach egg is when the white is not runny and the yolk just begins to harden a round the edges but when you cut into it you get that flowing yolk. (I love dipping the my bacon into the yolk)

The most popular way to serve a poached egg is over toast but there are so many other delicious ways. Such as, over salmon, bacon, salad, burger or with sliced avocado on a plate.

You don’t need to be afraid to prepare a poached eggs. Here is my method that works every time and I will also include a tip for you…

Spring is here and I just love cooking with fresh vegetables.  I love walking through the produce department at Shop Rite as it's always inviting and they also carry organic vegetables and fruit.

My husband I spend the day working out in our yard and we were so excited to enjoy steaks our Big Green Egg.  We just returned from Cabo and it was a great trip but after eating Mexican all week we both just wanted steak and a nice salad. This was a perfect meal for the 3 of us!  Of course we cooked up a steak for Jake too!!  

This can be made a day in advance stored in the refrigerator. 

I should have added caper - I will next time for sure!
