Quick Asian Chicken Soup – Cooking for One!

I make dinner almost every night even when I am home alone! Sometimes I do scramble up a few eggs or add leftovers to a salad but other nights I use creativity by opening up my refrigerator using up what I have on hand.

This morning I opened the freezer and found one bone-in chicken breast. I took it out but didn’t have any idea what to do with it at that moment. As the day went on the snow came and it is very cold here in Connecticut. Therefore I decide to make a soup! I looked in the refrigerator and this is what I came up with. I do wish I had a red pepper – so if you make this soup add some or other vegetables. I had a cubanelle pepper and it was delicious in this soup!

PS – there were even a few pieces for Jake!!

Quinoa and Kale Meatballs

I love quinoa and I know many Paleo followers will say that it's not allowed but I love it!  We don't have it often but I think it's really good for us to eat.  I served these over a quinoa salad full of vegetables then drizzled with EVOO and Balsamic.  Perfect to bring to a summer outing.  That is what I did and everyone loved it.  It went great with my friends Lisa's ribs!

(PS - I didn't need the entire bunch of kale for the meatballs.  I cooked it all up and added the rest in the quinoa salad.)

I always make a salad when using quinoa but today decided to make soup!  I just love grabbing a rotisserie chicken from the store as it makes weeknight meals so easy and delicious!

My future daughter-in-law loves quinoa and so do I.  I made this as a side dish with my ham dinner the day after Thanksgiving and everyone was excited to give it a try!  I made sure there was plenty left over for Leia to take some home!
