Paleo "Corn Bread" Stuffing

Stuffing is my favorite side dish!  I just love to pour gravy over on Thanksgiving then use it multiple ways for left overs!  

What I love to do with my left over stuffing?

  • Make an open-faced sandwich with turkey, stuffing, cranberry sauce and gravy.
  • Turn stuffing into muffin cups.  Add in left over green beans, sweet potato casserole and chopped up turkey!  Of course, gravy...  We just love our gravy.
  • Bake in a sheet pan then cube - re-bake and use as croutons in your turkey soup.
  • Make a turkey pot pie and use your stuffing as the cover..

Paleo "Friendly" Flourless Chocolate Cake

Are you looking for a delicious and healthy dessert recipe! Try my Paleo "Friendly" Flourless Chocolate Cake.. This is perfect for entertaining or just surprising you loved one with a special treat! Pour into the prepared pan and bake until the cake is set, the top starts to crack and a toothpick inserted into the cake comes out. About 25 minutes. Let stand 10 minutes, then remove sides of pan.

While the cake is baking in the oven take heavy cream and vanilla and pour into a mixing bowl. Beat until fluffy (3-4 minutes). Cover and refrigerate until ready to use!

Note: You can use a large glass bowl and add chocolate and butter then microwave for 1 minute. Use a spatula and combine until chocolate and butter is melted. Then add in vanilla.

Cooks Note: You can use regular white sugar if you prefer!

When I make a baked dish like this I always take a moment to decide how I want to serve it.  I just love my Emile Henry baking pans.  They are great from oven to table!  Just wanted you to know that!  xo

I love egg whites and always have a 16 ounce container in the refrigerator.  For some reason I had 2 new ones and decided to make an angel food cake and serve with a Creme Anglaise.  

This turned out to be a very enjoyable and delicate dessert for my "bring a friend for dinner night".

Note:  I did put them in the refrigerator in bars after they cooled for 30 minutes as it made it easier to cut into square.

Galette a French term used in various types of flat or round crusty pastry.  I love making a rustic dessert filled with fruit for Thanksgiving or when entertaining. 

Let the dough refrigerate for a minimum of 6 hours.

PS:  You will notice some fresh thyme in my dessert.  I had some handy and wanted to add some to the apples.  Go ahead be creative!

I love these 2 words – Artichoke and Bruschetta! Putting the 2 of them together is just magical.

Now the meaning of Bruschetta is – Bruschetta (Italian pronunciation: [bruˈsketta] is an antipasto from Italy consisting of grilled bread rubbed with garlic and topped with tomatoes, olive oil, salt and pepper. There are many variations including toppings of tomato, vegetables, beans, cured meat, or cheese; the most popular recipe outside of Italy involves basil, fresh tomato, garlic and onion or mozzarella. Bruschetta is usually served as a snack or appetizer. In some countries, a topping of chopped tomato, olive oil and herbs is sold as bruschetta.

Therefore using Paleo and Bruschetta in the same recipe name is really incorrect! However I will be replacing the grilled bread for grilled veggies! I just love saying bruschetta – It is kind of sexy!

Anyway I have many bruschetta recipes but due to my love of artichokes this one had to be shared! Enjoy

I whipped up unsalted butter and honey together and put in a small bowl.  Covered with clear wrap and refrigerated.  Let come to room temperature then spread over warm Paleo Banana Bread!  YUMMY    xo

I am a seafood and chicken kind of gal but my family loves beef!  When we have all of the kids it's easy for us to make a beef tenderloin.  

I always start by olive oil and a little salt and pepper!

My husband went up in my office and found some Black Dog Belly Rub from Mom's Gourmet and seasoned away.  We roasted and took it out medium rare in the middle and everyone had a piece they enjoyed. 

(I even made popovers which was enjoyed my me - and everyone else)

It's almost the end of the season for us at the lake and with us moving to Florida I really want to clean out the refrigerator.  I will be using up what I have over the next few weeks and this morning I found 2 bags of frozen blueberries.  I normally use them for my smoothies and this morning I wanted pancakes.  I love pancakes but don't always want to stand over the stove flipping them. 

This morning I decided to make one in my and OMG I was in Paleo heaven!  I did drizzle local maple syrup and now I am a happy person ready to start my day.

I was laughing to myself while making these because there is really no such thing as a boneless chicken wing.  But we are using the same method and using boneless chicken.

I love chicken wings and so do millions of others but when entertaining at home I don't like to make them because of the mess.  The bones that we need to discard, the big pan to fry the wings in and of course all of the sticky fingers!  

My Paleo boneless chicken recipe are not only healthy and easy to make but just pop in toothpicks and there won't be any sticky marks in your house!

This is great for breakfast on-the-go or even to enjoy while reading your morning emails. I gave my husband a mug before he left for work and he actually sat down and enjoyed my Paleo breakfast coffee! I like my coffee on the strong side therefore this made a perfect coffee and breakfast in one!

We don't eat a lot of bananas so I end up freezing them. I peel, cut in half and place in a freezer bag. This allows me to take what I need for this paleo recipe, my smoothies or baking!

I added my SFH vanilla in my breakfast coffee.
