My husband keeps telling me that I created how picky Jake is when it comes to eating and treats.  He will eat some treats (mostly high end all natural) and ones that I make him.  If you know me then yes I am guilty.  Jake gets either an over easy egg or leftover steak, hamburg, salmon or other good quality protein with his morning kibbles.  

I know he is a DOG but he does know when I am baking or cooking for him.  I decided to make him some brownies and he shared them with his friends RJ.

I am calling this old-fashioned because my Nana made it this way and she had it on the stove simmering all day!  I made this soup in one-pot using my favorite Dutch Oven and my favorite spices!

My granddaughter Brooke and I have developed a special bond which makes me so happy because it resembles the relationship I had with my Nana.  I just wish she didn't live so far away from me.  I cherish all of our time together and we love to cook and we made this yummy soup together!  OMG I never saw a 10 year old devour so much soup in one sitting!  She said, "I can't stop eating".. Love her so much.

Go ahead and make this recipe and making memories is amazing!

Olive Oil Zucchini Bread

My dad went away for a week and when they returned his zucchini were very large!  So he gave me two and I knew a few loaves of zucchini bread was going to be baked in my oven!  I love adding extra-virgin olive oil in my zucchini bread - It makes it extra special...   I am Italian.. 

I did make one for my son and added 3/4 cup of chocolate chips!  Once a mother always a mother no matter what age your kids are!

Cindy's Tip!  Take your zucchini and shred either by using a box grater or the disk attachment on your food processor.  The the zucchini and place in a colander in the sink and place few paper towels on top (maybe a stack of 4) then top with a pan for about 30 minutes.  When ready to use just do one more press down on the paper towels.  That will remove the excess liquid and make a perfect bread.

The rice in this is actually cauliflower.  I love how light the cauliflower rice is for this dish and you can have this meal ready in no time and remember serve it right out of the pan!

I love Italian dishes! Of course I do....  However when it's just Glenn and I preparing a great meal in one pot makes me very happy!  That means I get to spend more time with Glenn enjoying a glass of wine and catching up from our busy days.

I found by cooking all of this dinner in one pot added so much flavor to the dish and prevented the grill from flaming or pieces falling in the grate!  Using my Cast Iron Pan made it super easy and I served dinner right from the pan!  How easy is this.........  Love one pot recipes and this one is Paleo too...

Glenn and I are not very big eaters and I don't go wow over steak (just me) but I go crazy over eggplant.  I did pick up 2 boneless rib eyes at Highland Park Market but we only cooked up one and save the other (wrapped and froze for another dish).  This was a perfect meal for the two of us.  For the bigger eaters - go ahead and cook up 2 steaks!

You can make the same amount of vegetables for 2!  You can also grill the steak on the grates.  We are just loving the cast iron pan.

My family loves chip and dip! I decided to make a healthier version and it was certainly a big hit. At first they didn’t like the smell of the coconut oil when I was frying up the chips but they ate them all! I know in Paleo many don’ t like to use dairy but this is a gluten free recipe and I personally like to enjoy a little dairy from time to time! I must admit that topping with the pancetta make this dip “super amazing!” I can’t make anything without a little Italian…

It has been really cold here in Connecticut and I have been cleaning out my freezer and creating new recipes. Using 2 heads of cauliflower to create this yummy crust to surround ground turkey and vegetables in a thick chicken stock made this a great dinner.  I also love that using my beautiful braising pan it was perfect from the stove to the table!  Also, I am going to show you how to make this in 1 pot!  Enjoy

I was in the kitchen making rice balls today and was thinking about another way to use the rest of the risotto. I just came back from the butcher and purchased hot Italian fennel sausage and put this dish together. Took it to a friend’s house and it was a big hit! The next time I make it I will add a little red pepper flakes to kick it up a bit. Other than that – It was amazing!! You need to try this Italian Sausage and Tomato Risotto!
