As an Italian there is always a "just in case" dish standing by for any gathering.  No matter if we are grilling burgers or preparing a gourmet dinner you will find a lasagna or stuffed shells as a back up dish.  Believe me it never goes to waste!  Especially later on in the evening everyone gets excited when I pull out a dish already made and it just needs to be heated up.

I love stuffed shells and my Nana and I would make these together and sometimes I would have for breakfast before school.  

Make my Simple Tomato Sauce for this recipe!

PS - I love using the meatloaf mix at the grocery store or ask your butcher for the pork, beef and veal combination.  YUM

When my nana was alive and I was in college we would go to dinner (breakfast) one night a week. Then she would take me grocery shopping. It was a great evening for both of us to spend time together. Her favorite was a baked pancake with fresh fruit. I have so many fond memories of her and the times we spent together. I wanted to re-create this recipe and dedicate a delicious breakfast to her. Miss you and Love you.

My Nana loved Sunday dinners with the family. This was one of our favorites. We would get up early and start the sauce before church. Then when we got home the roast went into the sauce for the day. The tenderness of this roast is just amazing As a family that loved peas my grandmother added them right on the platter next to the roast covered in sauce. I am so grateful to have these amazing memories! Italian recipes are the best especially bringing families around the table.

My nana always made this dish on the stove top but I have found the slow cooker works great and I don’t need to worry about the stove being on all day! I will share my slow cooker recipe with you but if you want to make this on the stove – just keep in on low all day!

My kitchen is always busy and I am trying to make more Paleo desserts. I had all of the ingredients and decided to make this No Bake Paleo Apple Bars. I brought to the box but the coach decided to enjoy them himself... They are so good and great with my afternoon cup of tea!!

I used my Hamilton Beach Big Mouth Food Processor to make this dessert! Just one appliance to clean... Love easy baking!

I also used my OXO measuring cup and OXO mixing bowls, I love them!

While our amazing trip in the Virgin Islands we visited a few islands.  My husband and I always look for the local restaurants and we heard from our Captain and his wife that we  had to try a Roti.  I had a chicken roti twice and now I had to make a Paleo version. I am calling it a not strict paleo because I did add the garbanzo beans! I know it a NO NO but I love them and really enjoy them in this dish.

In the Islands our Chicken Roti was served in a large tortilla but I am going to omit the bread and just eat it as is with sliced avocado.

Now depending on how strict you are on the Paleo diet you can omit the chick peas.  If you are Gluten free then they are fine aw well as a paleo/zone diet.  I love chick peas and decided to use them.

The original recipe has white potatoes.  I used a white sweet potato but you can use white or yellow.  Enjoy!

I have been on a muffin kick lately!  I do live my muffin pan and this recipe makes 12 perfect muffins. I use an ice cream scoop to keep them all the same size in shape.

I also used the enjoy life mega chunks. 

Our friend Joe came over for dinner and he and I were digging into them before we ate my Veal Parmesan which was also amazing.

I always tell my friends to never test new recipes when entertaining. We were invited to our friends house for a paleo dinner this past Saturday and I was asked to make a paleo dessert. Dessert is really not my favorite as I just love to cook but will bake! I saw all the apples at the market and already had the raw nuts (since I make paleo crunch). I did text my friend as let her know that I was testing a new recipe! She had faith… Well, even I have to admit it was amazing. I guess you could even add chocolate to the nut crust but I decided to keep it just nuts.

After I made this the next day I was still thinking about it and decided to do it again but this time I used a muffin top tin. I even added the figs in with the apples. I love the individual servings. You really need to try this paleo recipes~!
