My husband and I just love going to Cancun, Mexico.  It has become one of our favorites and last minute get-a-way.  The first time I ever had bacon in a glass was at Harry's Prime Steakhouse.  When you sit outside in the bar area they set down a tall glass full of bacon pieces.  How cool is that!  I make it at home now for the kids and they just love it.

We have a weekly "bring a friend to dinner" and I thought this would be a great idea for a champagne glass set at the kitchen table and not to mention a conversation starter!  

These are so easy and so yummy but the only caution is my oven got a little smoked up from the maple syrup so light up a candle!

I just love salmon and you can't get it any better than at City Fish!  I received my new bistro grill pan and I just LOVE it...   After grilling on my stove top I put under the broiler for just a few minutes and the maple syrup caramelized perfectly.

Mascarpone Coffee and Chocolate Parfait

Mascarpone is an Italian cheese made from cream, coagulated thanks to the addition of citric acid or acetic acid. After denaturation, the whey is removed without pressing or aging.

In Italy this dessert is called Coppa Mascarpone. Coppa in Italian means Cup and this dessert is very popular in Italy.

This dessert is a chocolate cream layer followed by a smooth mascarpone cream, topped with amaretto cookie crumbs and chocolate curls. You can add fruit to this dessert and dress it up in any glass, cup or even a jar. You can be extremely creative with my Mascarpone Coffee and Chocolate Parfait.

Making these gourmet meatloaf sliders were a big hit at a party I was hired as the Chef for an engagement party.  I didn't use those standard slider buns!  On No...  I used a gourmet french loaf then added my homemade ketchup and roasted red peppers.  

We couldn't keep the platter full.  Go ahead and give them a try at your next dinner party.

My meaty breakfast cups are the perfect Paleo recipe for an on-the-go breakfast. I love to make them for company and top with a fried or poached egg. This breakfast cup taste amazing with the yoke going into the meat and vegetables! Great for entertaining.... I was able to make 10 medium breakfast cups with the recipe below.

You can chop or grate your zucchini. I found grating using my Kitchen IQ grater works the best! I actually grated 2 and put in a colander to drain for 30 minutes. Took 1 cup for this delicious breakfast cup and saved the rest for my Paleo Zucchini Bread.

A frittata is a flat style Italian omelet that is normally made in a cast iron pan on the stove, then finished in the oven. When ready to serve, just slice into wedges. In most Italian families we don't like to throw away any food. A frittata is a great way to enjoy your favorite meat and vegetables. You can even top with your left over Sunday sauce.

We loved this frittata while in Tuscany and each day was prepared with different fresh ingredients.

Meatza

Meatza is a great Paleo recipe if you want to make something quick using up leftovers or just make it fresh and it is also a one baking dish meal. This meal resembles pizza! I love pizza.. The difference is that the crust is made out of meat. I like topping with fresh parmesan cheese then broiling to brown it up a bit but you can omit if not using dairy.

I have also made this using 2 pounds of ground turkey and layers of sauté eggplant which was simply amazing. When I make it again that way I will be sure to take a lot of pictures. I also have used fire roasted tomatoes for this dish and it came out great! Use your creativity!

I like using a glass lasagna pan for this recipe.

After I am on my feet all day during my cooking videos I am starving! This is a typical meal for me to put together after a shoot. I normally have all of the ingredients on hand and who ever is left after the video crew leaves! We eat….

As our summer is starting to wind down it is time to start using up what we have in the refrigerator at the lake. All of my cherry tomatoes are coming at once and my basil is taking over the garden. I had a package of thin sliced chicken breast and decided to make this dinner.

If you know me then you will love another one of my one pot meals!

This was a dinner for two but there was enough left over for lunch!

NOTE: You can use chicken breast, cut in half then cover with plastic and thin using a mandolin.

The best part of having an entire inventory of spices I can make anything...  I had a piece of flanks steak and decided to make a Mexican feast for us!  I love Mexican food and made my own spice rub to let the steak sit it for an entire day! All we had to do was grill each side for about 4 minutes and it was perfect!  

If you have any left over just store in a sealed jar!

We made soft tacos and had all of the fixin's..  Enjoy
