Lamb Bolognese

During the summer we love grilling and we have the best butcher near us.  ED Stearns Meats has everything we need for the summer.  Some of their meats are frozen but you can just call them and they will take them out and have them ready for you.  Also, the butcher will cut your favorite slices of meat right in front of you!

I was at Stearns getting veal chops, pork butt and decided to grab some Lamb Shanks to make this delicious bolognese.  Give it a try!  Very yummy...  I served with roasted cauliflower but you can serve with pasta, polenta or just eat out of bowl and dip your bread!  Enjoy...

If you can't find lamb chops ask your butch to cut up a rack of lamb into individual chops. They will gladly do it for you! You can assemble the chops in advance and keep refrigerated until ready to grill.

*Cind's Note* To finely mince garlic, after you peel and chop your garlic continue to finely chop. Take a pinch of sea salt and sprinkle on the garlic. Take the flat edge of your chefs knife and press firmly down to the garlic and rub on the board.

Don't we all love our Thanksgiving Leftovers!  We do in our house and we always make a soup which is always a hit.  Being Italian I love making a bolognese.  I love to add in some of the butternut squash to sweeten up the sauce.  To make this a paleo pasta dish use spaghetti squash which is what I do and it's so good!

This is a quick way for a dinner or appetizer and using cooked shrimp!  I love getting my shrimp at City Fish and they always have cooked shrimp on hand.  You can always buy raw shrimp and make it yourself.  Either way this is a yummy recipe!

For the rice I am using cauliflower for a great Paleo meal!  If you are not paleo then go ahead and enjoy rice.

I am also using feta cheese in this recipe - feel free to omit!

Last minute I added capers and it really made this dish great.....

Lemon Poppy Seed Muffin

I came up with this lemon poppy seed muffin when I was going through my spices that came in from simply organic and decided to use the poppy seeds. I actually am not a huge fan of them as I hate picking them out of my teeth! However, my husband loves them so these are for him!

I had leftover butternut squash and decided to try out this recipe. I didn't tell him that I was using squash in his muffins and I was so excited that he loved them. If you need to cook your squash you can find the instructions below the recipe but you can also find them in your freezer section too!

Lemon Yogurt Cake with Raspberry Puree

When the cake is done, let sit for at least 10 minutes. Take a butter knife and go along the loaf to make sure it is loose and take out and place on a serving dish.

 

To serve, slice loaf and put on a dessert dish, add the raspberry puree over the slice. Add blueberries, strawberries or raspberries on the side of the plate or a few on top of the puree.

NOTE: For the home made whipped cream – blend whipping cream until firm, add 2 tablespoons of confectioner sugar and 1 teaspoon of vanilla. Continue to blend until smooth. Refrigerate until ready to use.

I love a salad with dinner and decided to make something a little different. I created this Lemon Zucchini with all ingredients I had handy in the house.

Especially with all of the zucchini coming out of my salad. I sauteed up 2 zucchini and set aside one for my breakfast the next day. This was so yummy that by the time the platter came to me it was almost gone! A good side of a yummy salad..

I love using my Kitchen IQ grater to prepare my Parmesan cheese! Enjoy
