I created this Kale, Artichoke and Pecorino Salad the other day with ingredients I had in the house as a side dish for company. Everyone just loved this dish! Adding the Pecorino right before serving gave the salad and extra flavor that made this dish very yummy!! Give it a try! You can omit the cheese to keep it Paleo!

Wow I was thrilled on how great this dip came out for us!  As many of you know we spend the summer at our lake house in Massachusetts and we often get pop-in company!  Luckily I never fret and always have basic ingredients (and a little extra) for these weekend.  As avid entertainers I can quickly come up with something to serve my guests and luckily I had a few pieces of bacon left from breakfast and this appetizer was a great hit!  

We  had a little rain storm and enjoyed appetizers inside with our wine and when the weather cleared we grabbed our glasses and came outside.  Next thing we hear this noise and as we look over Jake is on the table eating the rest of the dip!  OMG he has never done that before and of course we all just laughed.  Oh Jake....   We love you...

Enjoy this paleo recipe and if you don't have kale use spinach or even arugula!  I have and it's great!

I taught a cooking class in my neighborhood and shared this recipe with the ladies.  Everyone just loved this soup and it was so much fun making while enjoying time and meeting new friends.

I love to combine vegetable and chicken broth but feel free to use one that you prefer.

Before I make another trip to the super market, I always like to see what I have in my refrigerator that I can use up. I found the perfect ingredients to make up a rustic kale, mushroom and bacon frittata topped with tomato and avocado salad!

This is such a simple and delicious recipe to whip up for the perfect breakfast or even a snack. Don't  have enough time to make it that morning? Make it the night before or even make them in smaller quantities, perfect for on the go by just using a muffin tin!

I love fritters because they go perfect as a side for any dish and left overs are amazing topped with a poached egg!  Enjoy

Note: Normally I would fry fritters but found that baking is much easier as you can do it all at once and no spatter mess on the stove!

I know it can be hard to get the kids eating healthy not to mention cooking for them, getting homework done and running around with sports and other activities.

I was a very active single mom with a full time job at Corporate America but with a little planning and "sneaking" in the vegetables we ate dinner without going to a fast food drive-through.

My kids thought "muffins" or "cupcakes" when I made these little gems and their friends just loved them too! Our house was always filled with friends and neighborhood kids so it was great when I made these Kid Friendly Meatloaf Muffins!

Cook Once - Meals All Week - Make a double batch and enjoy some for dinner then take some and cut them up; add to a sauce and serve over pasta.  Take the rest and crumble, dice up tomato, lettuce, cheese and make tacos!  3 meals from 1 recipe!

I love soup and especially in the fall and the combination of the vegetable and beef broth make this a perfect lunch.  Today we are at our lake house enjoying the foliage.  This soup only take a few ingredients and it's perfect!  Enjoy this healthy Paleo soup today...

You can even throw all of the ingredients in your slow cooker!  Set to low for 4 hours and enjoy.
