We just love having friends and family over while we are at the lake.  My long time friend Pam and her husband Tom visited for the weekend and I want to spend time with them and not slaving over the stove but serving them amazing food.  I have known Pam since 1993 and I just adore her!  We did enjoy the weekend and the weather was just perfect.

This quiche was a big hit!

Are you looking for hearty breakfast? The best part of frittata's is that you can add your favorite ingredients. I remember when my French grandfather loves potatoes and eggs and he would cook them together in a very hot cast iron pan and the edges would burn but we loved that part. My grandmother used to bake them together in the oven in a clear baking dish and it was amazing. Either way this is a great breakfast. I love a little potato in my eggs once in a while and I add milk and cheese but you can omit based on your diet or nutrition plan. This is a gluten free breakfast and of course Italian style. Enjoy

PS - I happened to have 3 slices or organic cheddar cheese in my refrigerator so that is what I used!

Don't you love One-Pot Meals?  I do and this is a perfect Everyday to Gourmet recipe! This is really a combination of a meatloaf and a meatball.

Well my husband was traveling and I invited my girlfriend Lisa over for dinner and I made her a meatloaf.  Well not an ordinary meatloaf but a beautiful Italian Meatloaf and I topped it with smoky thick cut bacon and I made a beef gravy which was perfect.

I made this in my braising pan which looked absolutely beautiful.

Everything can be made in one pot!  Enjoy

Hearty Vegetable Turkey Lasagna

On Sunday’s I normally go through the freezer, refrigerator and pantry. I have been doing this since my kids were little as I plan my meals for the week. I don’t plan for the week anymore it is more a day to day thing for my husband and I but going through everything we have handy is still a tradition.

Today I have sweet potatoes in the pantry. In the freezer I found eggplant that I have already grilled and saved. In the refrigerator I have 1 yellow pepper, 1/2 red pepper, onion, garlic and zucchini. I always have canned diced tomatoes and herbs so this was a great creation. I am really proud of myself and may not want to share this dish – I probably will..

This is what I did to create this amazing Paleo Recipe using a sweet potato crusted hearty vegetable turkey lasagna.

I love to use my Panderno  spiral vegetable slicer, when spiraling my potatoes into noodles.

My tip: When you saute or grill vegetables make extra and freeze to use later!

I never ate them often but every once in a while there was a “craving” for onion rings. My husband and enjoy as a “treat” but always regret the decision after. Recently after having that “craving” again I decided to put together a healthier and guilt “free” way to enjoy this lovely side! I made herb baked onion rings and they were a hit and actually taste better then the traditional fried. A keeper in our house! They are also a paleo recipe and gluten free NOT to mention AMAZING!!

Tip: Do not use the smaller rings of onion. Put them aside and use in a salad or cooking!

I have so many herbs growing in the garden and when my husband came home with Veal Loin Chops this recipe was created. I combined all of my herbs together and this dish was delicious! This was served with my Sweet Potato Pie

I did however take the loin chops out of the package and season them with salt and pepper on both sides then put into a plastic bag and add minced garlic and olive oil. Seal and refrigerate for 3 hours.

You can make this a paleo recipe by omitting the parmesan cheese and breadcrumbs.

Herb Grilled Chicken

I have to start off this recipe by saying OMG.  I had a sisters weekend to celebrate Michelle's 50th and our friends Dennis and Lisa offered to take us out on their boat for the day.  I made some amazing Herb Marinade from my garden and let the chicken sit for about 5 hours in the refrigerator.  

Glenn grilled them then I thinly sliced and made a large sandwich.  I cut them up into individual portions and everyone just loved them!  Hubby even ate the remaining sandwiches for lunch the next day!

Now to keep the chicken paleo you can enjoy grilled or over a salad or grill up vegetables (zucchini, eggplant and red onion).  That is what my sisters and I did with the left over chicken then I drizzled EVOO and balsamic.  Super delicious.

Go ahead and grill this today!
