I have been making this banana bread for many years. It is always moist and delicious and a great way to use up browning bananas! Sometimes I make loaves in mini-bread tins and freeze them individually. You can take them out when unexpected guests come over for a cup of coffee!

My kids are always asking me to make my famous macaroni and cheese when they come home to visit. I am also requested to bring this to cookouts or dinners. I always make a double batch and it’s funny because the host will say; “oh good I can save some for myself”.. I laugh and say; “there won’t be any left”. And there never is a single noodle left. When making this dish for a casual event use the disposal pans. No clean up!!

Sometimes I even like to add in fresh basil and left over sauté zucchini and summer squash! Of course you can add in lobster and ham if you want to make this an entire meal.

This is also this amazing cheese called Parrano – You can use this cheese to make a great macaroni and cheese. Try with just this cheese alone to enjoy the taste of Parrano!

I love canning green beans and having them all season to enjoy. I wanted to test out a new recipe using Mom's Gourmet and this was a hit. The best part was it took me 30 minutes from the time I stepped into the kitchen until it was served to my husband!  Thanks to City Fish for the amazing fresh shrimp!

Doing my normal clean out in the freezer I found 1 piece of filet tenderloin and 1 piece of bone-less chicken breast.  I also had a few onions, red pepper, yellow pepper and a cubinelle pepper.  Of course, Fajita's screamed out to me.  

The first thing my husband said is; "we don't have any fajita seasoning"  Um honey, we have Simply Organic spices.   I will make my own seasoning.

Yummy dinner at the lake for the 2 of us.

The name is French for “cute filet” with “filet” meaning thick, boneless slice and mignon meaning “dainty.” ... French: tournedos, filet de bœuf.
 
No matter if I am grilling or sautéing this beautiful cut of beef; I always take it off between 135-140 degrees F.  That is a medium-rare temperature but remember it will continue to cook while it is resting.  Your family or guests may say, "I like my meat medium"  Do NOT over cook this meat.  I am not a rare beef eater but this tender meat is so delicate that you don't want to overcook.

There are so many ways to prepare flank steak and it cooks so fast you can have dinner ready in no time at all! I like to marinade for the day with salt, pepper, garlic powder and olive oil in the refrigerator in a sealable bag. Just heat the grill, prepare your salsa verde and this dish can be on the table in no time at all!

*CHEFS NOTE* Don't shy away from the anchovies as they make this salsa verde extra special and it does not have an anchovy taste, but amazing flavor addition. If you do not have anchovies then use 1/2 teaspoon of anchovy paste!

Flax" vegan" Eggs

As I am preparing for Daniel Fast it was necessary to come up with another way to use "eggs" in my recipes.  Especially for binding.  I was told by a Vegan baker that she uses Flax seeds.  I tested it out and yes......  Works perfect.

Here are a few tips from my stumbles.  I will be adding this recipe link to keep it handy on multiple recipes for the Daniel fast and any Vegetarian recipes.

Tips:  Get a coffee grinder (about $9.99 or go to a thrift shop for $2)  You will use this every time you make your Flax eggs.  

Buy raw whole flax seeds and grind them fresh each time. Keep flax seeds in the refrigerator or freezer for storage.  

You may find there is a "nutty" taste but I think it's very subtle and have begun to enjoy the taste.

This recipe is per 1 egg.  If you need to use 2 eggs just double, 3 eggs just triple, you get it now......
