It was great having some one-on-one time with Cayce as we made these yummy burgers. We made 5 with 1 pound of shrimp and while we were enjoying them it was mentioned that these would also make a great appetizer.

The cajun mayonnaise made these burgers even more amazing. We all loved this lunch together! Give this recipe a try…

Cooking Tip!  Heat your BGE to a medium-high temperature.  place your cast iron pan on the center of the grill.  Once hot add in a little oil then cook your shrimp burgers and enjoy.

This is a great stove to table dinner! I love using my Le Creuset Braising Pan for this recipe! Then of course adding fresh Parmesan cheese with my Kitchen IQ grater!

I used dried herbs in this recipe because I always have them on hand. If you have fresh just chop and double the measurements.

I was watching the food network and caught this recipe.  I had the large 28 ounce cans from sauce and changed the recipe a little to accommodate the larger cans and make them more of an adult bread. 

From Cindy!  I don't like to open a package for just a portion of the ingredients.  Therefore I also wanted to use the entire container of raisins!

I just love cooking with cherry tomatoes and especially when you can get a fresh box including a variety! I still have plenty of fresh parsley in my garden. I did add a few fresh slices of mozzarella cheese but if you are following the Paleo diet then simply omit.

My Caprese Chicken is a perfect quick 30 minute meal and prepared in one pot! How great it that.... I made a quick basil dressing and the recipe is below. This dressing made this chicken dish a little extra special.

I love my bialetti pan! The color, the use actually everything about it. I actually served our dinner right from the pan! Love...

I just love the summer months and all of the fresh vegetables we have available to us! We are very lucky to have so many farmers that share their harvest with us! This is a great appetizer and only a few fresh ingredients!

In my caprese stuffed zucchini you will find all of my favorites in just one bite! This is a great paleo version. If you are using cheese then add in chopped mozzarella.  Also, add any other fresh vegetables you have handy such as jalapeño peppers, red onion, artichokes, etc!

Tip:  I baked up an entire eggplant and used only 2 slices for this appetizer then used the rest to make my favorite grilled skirt steak salad!

I decided to make this delicious caramelized shallot meatloaf muffins as individual servings. This way I can freeze the leftovers and just take out one at a time to enjoy later. You can also form this meatloaf on a baking sheet or use a loaf pan. As a bigger meatloaf I would bake for 45-55 minutes.

While at Shop Rite I picked up a container of raw cashews. I enjoy almond milk and coconut milk in my smoothies, coffee and many recipes. Since I love cashews this seemed like a great idea and I was excited to try this milk.

I did taste it plain but decided to add honey, vanilla, cinnamon or other seasonings to complete this delicious cashew milk. Feel free to enjoy plain or add extra flavor!

It's Friday night and we are in Massachusetts for December therefore it's all about comfort food in my house. I wanted to use my favorite cast iron pan and make a one pot meal perfect for the 2 of us.  It does take a few steps but I actually served from this pan and the flavors were amazing especially the bacon!

This is a perfect dinner for 2 with maybe some left over for lunch the next day for 1 of you..   Enjoy :)

Chefs Note:  You will find below that I want you to remove the pork at 140 degrees.  You don't want it over cooked and when you continue cooking after adding in the vegetables then let rest a few minutes and slice.  The pork will continue cooking.

Cauliflower "Risotto" with Porcini Mushrooms & Peas

Risotto is a Northern Italian rice dish that is cooked for a long time stirring often.  A traditional risotto is cooked with a warm broth added slowly to create a creamy consistency.  As a paleo dish, it takes less time to prepare and the cauliflower gives it a perfect risotto feel.

I remember my Nana would make a cup of coffee and grab her stool and sit at a stove for an hour while preparing risotto!

 **Cindy's Tip!--Take the liquid from the porcini mushrooms and strain to use in soups.  You can also add a little to your risotto to gain a richer flavor!**

OK big news today!  When I was visiting my friend Teal at Sons and Daughter farm and winery I learned a few things.  First I had an amazing wine sampling then of course I went for my 2 jugs of kombucha.  While I was there her and David took me on a little tour and my takeaway was Yucca Root.  OMG...

Teal brought my a tasting of tapioca pudding their chef made from yucca root and it was the best I ever had.  I just love the texture of tapioca pudding and it was to die for!  Really.....

She also told me that the yucca root made a great thickening agent and also how you make cassava flour.

While I am doing our HewFit Challenge at our gym and the "game" excludes any flours even (almond, coconut, tapioca, etc) so I grabbed a yucca root to make Cauliflower cakes.

Enjoy a Paleo Pizza for dinner with a cauliflower crust. You can add any of your favorite toppings! Don't you just love paleo recipes. I love to top my pizza with fresh herbs.

Cindy's Tip! In a hurry just cut the head of cauliflower into florets and place in a microwave bowl then add water to cover half.  Set the timer for 7 minutes, drain then process!  

Disclaimer! I like a little cheese on my pizza but feel free to omit. Sauté up some greens or top with left over chicken or meatballs.  Go ahead make a pizza perfect for you!

I love using my 12inch Lodge cast iron pans!  You can prepare, bake and serve out of these pan.  I love one-pot recipes.
