As I was walking around the grocery store looking for inspirations  spotted a box of burger wheat.  I decided to grab the box and use it a few different way.  We love tobuli and I make kibbeh in the summer.

At the grocery store they had buy one get one free of grape tomatoes so I decided to roast one package with lots of garlic, salt, pepper and olive oil.  The combination went great together.

I was watching the food network and caught this recipe.  I had the large 28 ounce cans from sauce and changed the recipe a little to accommodate the larger cans and make them more of an adult bread. 

From Cindy!  I don't like to open a package for just a portion of the ingredients.  Therefore I also wanted to use the entire container of raisins!

OK big news today!  When I was visiting my friend Teal at Sons and Daughter farm and winery I learned a few things.  First I had an amazing wine sampling then of course I went for my 2 jugs of kombucha.  While I was there her and David took me on a little tour and my takeaway was Yucca Root.  OMG...

Teal brought my a tasting of tapioca pudding their chef made from yucca root and it was the best I ever had.  I just love the texture of tapioca pudding and it was to die for!  Really.....

She also told me that the yucca root made a great thickening agent and also how you make cassava flour.

While I am doing our HewFit Challenge at our gym and the "game" excludes any flours even (almond, coconut, tapioca, etc) so I grabbed a yucca root to make Cauliflower cakes.

This is a perfect side with any dish or add as many vegetables you want to make it a meal.  You can either add your favorite flavor profile; Italian, Asian, Indian, Mexican, etc...   

I love to make a big batch and scoop out servings during the week. Just warm and enjoy (or eat cold)

In our modern age you can now find riced cauliflower in the freezer section and ready to go.  Or you can pick up a head of cauliflower and rice yourself.

We just love summer vegetables.  At our summer lake house we love to grill and entertain.  My husband and I just love salmon and my Cauliflower Rice Succotash was the perfect accompany for our dinner.  Everything was cooked on the grill and we ate outside.

My husband was in India a few months back and our friends sent him home with a suitcase full of spices.  I decided to make a dish with some of my favorite ingredients chickpeas and peas.  Traditionally this dish is not prepared with green peas but I love them so they were added and I loved every bite!  

I have to admit that these spices are not used often in my kitchen and the combination was a little hot " spicy hot" for me but I still enjoyed it very much.  I will defiantly make it again.

I also made a batch of my Paleo Naan Bread to dip in the sauce and what a super yummy dish!

My family loves when I let them know we are having Chicken Parmesan for dinner! It's funny because many times when we go out to dinner my husband will order Chicken Parmesan then say, "that is not as good as your".  I always ask him why he orders it when we both know he won't like it!  

I love my chicken very thin for cutlets and therefore for parmesan.  I hope you love my chicken parmesan.  It's so easy to make your own tomato sauce - here is my recipe!

Chicken Scallopine is one of my favorite dinner for 2 Italian Recipes! This chicken recipe is perfect for Valentine's day as you can prepare in advance and just let simmer on the stove with sauce. Just don't forget to take out the toothpicks before serving this delicious chicken recipe to your honey dinner!

I like to add Fontina cheese but if you are following the Paleo diet you can omit!

I love cannoli's!  Let's just start there.  I remember when I was little my Nana and I would spoon out all of the ricotta filling from the shell of the cannoli and would laugh like little kids.  I really miss her especially around the holidays.  I just hope I am as good as a grandmother as she was to me!  

I came up with these cookies as it has the ingredients as a cannoli but in the form of a cookie.

Make these once and you will be hooked! Promise! You can serve these with spaghetti squash or your favorite pasta!. It is delicious and I recommend you try them.

Sometimes I create a meatball sandwich with a medium size portabella mushroom and that is a meal you won't forget. Other times I just like my meatballs in a bowl with my homemade sauce and just enjoy every bite!

This make a full batch of meatballs! Just freeze what you don't use. Enjoy.
