There is just something about homemade cornbread that makes everyone happy.  We smoked a pork shoulder for Superbowl  Sunday and I thought having some cornbread biscuits would be a great addition to the rolls.

I just love Bob's Mill Paleo Baking Mix and it worked great with this recipe.

Also, I don't buy buttermilk and it's so easy to make at home. This is all you do!

  1. Pour 1 cup of milk into a measuring glass
  2. Either squeeze 2 lemons for 1 tablespoon of juice or 1 tablespoon of white vinegar to a bowl.  Stir and let sit for about 10 minutes....
  3. Now you have buttermilk.

I love starting my Italian cooking with pancetta and onions! This is a great way to make a traditional Italian Sauce.

Amatriciana goes great with seafood, chicken cutlets or even pasta! It does have a different taste than your Italian marinara but once you give it a try…

You will love it.. Sometimes I add capers right before serving! Cooking Italian is certainly my favorite! Enjoy…

This is an amazing one-pot recipe.  I served over riced cauliflower but jasmine rice or roasted vegetables would be great too!

Note:  I love green onions and hate when they wilt in the refrigerator so I used the entire bunch.

My family loves popovers and I enjoy making them for them.  We all so the popover dance together.  I had some fresh asparagus and my Lodge Cast Iron pan was on the stove already to sauté them.  Last minute I decided to create a large popover and I was so happy that everyone just loved it.

Note:  My pan is 12 inches and this recipe was developed to fit this pan.  I you have the 10 inch pan you will want to alter the recipe.

I know - I know - I am Italian.  However, we have Labanese friends and they would bring over pita bread, grape leaves and kibbeh.  So good!  I remember how my Nana's friend could take a large pieces of pita and rip it in 1/2 the long way so each person got one half of a large pita and made us an amazing sandwich.  Sometimes I wish i was that little girl in at my Nana's house!

I love lamb and that is the traditional way to make kibbeh but not everyone enjoys it so I decided to make it with beef and will put out a large platter to serve the kibbeh by adding grape leaves, hummus, tabouleh,  lettuce, cucumbers, feta cheese, olives and extra-virgin olive oil.

If you asked me what is  my favorite Italian dish - My answer is always the same.  Chicken Cutlets.  There are so many way to enjoy "Cutlets"  Check out my blog post on some of my tips and other recipes.  

Many recipes include frying your cutlets but I don't always want the mess of splatter to clean up so I love to bake them.  So easy and less mess!

Check it out.  I hope you try this recipe and enjoy.  This is also a 30 minute meal from start to finish :)

Cindy's Tip:  You can make many of these and separate in containers or sealable freezer bags then freeze to enjoy another time.

I wasn't sure what to call this delicious cocktail. I decided to name it a Berry Mint Lemonade Vodka Cocktail. I filled my blender with these summertime ingredients and we all enjoyed this cocktail. You can make it as a virgin drink by omitting the vodka.

This recipe served 4 of us! I made fresh lemonade without sugar and the pear nectar is optional. I made the first batch without the pear nectar and when I was making the next batch I realized I had some in the refrigerator and decided to use it.. Really yummy..

Of course I used my KitchenAid® 3-Speed Blender!

Cindy's Tip!  Make ahead and just keep warm in your slow cooker to enjoy anytime.  We love to keep this on the counter at our lake house.  The kids can serve themselves when they are hungry!  Yummy

At the lake during the summer it's easy to make a dish, get in the boat and head over to a friends house.  I get to have my granddaughter Brooke with me all summer so my dishes need to be kid approves.  

I decided to make sloppy joes then it was easy to wrap and just warm at our friends house.  These were a big hit and fed 5 adults and 6 kids.  There was about 2 tablespoons left in the pan!  

I love veal mixed with my meat as it really lightens up the texture and taste amazing.  You can also use pork or just all meat.  Of course, the kids just knew it was sloppy joes - They all loved it...  

My stomach does not do well with green bell peppers but you can certainly use them in this recipe.  I went for the red and yellow.  This is also a great dish to use your Cast Iron Pan!

I love summer time at the lake because I get to spend it with my grandchildren.  I have Ty (4) all week and this morning he wanted waffles.  He love to cook with me so of course we made them homemade.  The best part for him are the eggs!  I decided to whisk the egg whites to make these waffles even more amazing.  

This batter made 4 perfect waffles in my waffle iron for my 2 sweeties!

We just love our Big Green Egg and since my husband has made Pulled Pork 3 weekends in a row I decided to change it up for Labor Day weekend and make some ribs!

Here is recipe for the rub! (this recipe is for 2 racks of ribs)

  • 1/4 cup brown sugar
  • 1/4 cup paprika
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt
  • 1 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1 teaspoon freshly ground pepper

Combine together...  Rub the ribs, wrap and refrigerate overnight.

Cindy's Note:  I made this for 4 of us so I cut the ribs in half to make everyone an individual serving. You can keep it whole or cut it half.  It was also easier for the EGG.  I just love my Simply Organics Spices!

I have found myself following a more Mediterranean diet due to some stomach issues I have been experiencing.  Not fun!  CAT scans, Ultra sounds, Endoscopy, Medications and still no resolution.  I have adjusted my diet just a little and I am feeling relief.  I just love quinoa and made a batch of beans.  I even made my Paleo Tortillas and it was the perfect match!  Enjoy this healthy burger!

This is a great party recipe that will be enjoyed by all.  I love using frozen cooked shrimp for this pasta dish.  This pasta salad is great way to use up fresh vegetables you have cut up in your refrigerator.  Add your favorite fresh herbs!
