I have found myself following a more Mediterranean diet due to some stomach issues I have been experiencing.  Not fun!  CAT scans, Ultra sounds, Endoscopy, Medications and still no resolution.  I have adjusted my diet just a little and I am feeling relief.  I just love quinoa and made a batch of beans.  I even made my Paleo Tortillas and it was the perfect match!  Enjoy this healthy burger!

We just love summer vegetables.  At our summer lake house we love to grill and entertain.  My husband and I just love salmon and my Cauliflower Rice Succotash was the perfect accompany for our dinner.  Everything was cooked on the grill and we ate outside.

Perfect summer dinner with friends.

Cindy's Note:  I made this dish on the grill.  You can also prepare in your own kitchen stove top. Feel free to boil the corn.

I made this recipe in the Instant pot and it came out really good and it did take less time.  I am still new with this pot but enjoying it so far.  I am also including a stove top option below.

Roasted Red Pepper Soup

Out of the blue my husband walked in the kitchen and asked me to make Roasted Red Pepper soup.  I said sure but where did that come from.  In the 12 years we have been together I never made it for him.  

We had our friends over for dinner and everyone was moaning while taking a spoon full. The coconut cream that I added to the top made the soup very creamy and delicious!  

You can make this soup in less than 30 minutes!

Tip:  I always leave a can of coconut milk in my refrigerator.  The top creates a cream to use for the top and use the liquid for another recipe or a smoothie!

I just love pad thai but when eating out its very high in sodium and that discourages me to order this dish.

I sometimes make it myself and since I had a container full of bean sprouts it seemed like a perfect lunch!

If you are looking for a paleo version then check out this recipe using zucchini. It's really good as well but today I felt like mixing it up a bit.
