This Apple and Chestnut Stuffing is really delicious. I made it to go with my apple spice pork tenderloin and the flavors were perfect together.

To make this a paleo recipe just omit the stuffing and add cubed sweet potatoes! I also Like to use my Olivia’s Croutons - traditional style stuffing! So yummy….

You can make my Italian Sausage and Mushroom Stuffing a Paleo Recipe by omitting the stuffing mixture. I love Olivia’s gluten free stuffing mix and only use 2 cups. They also have traditional and cornbread but either way we give their products a A+

To make this a Paleo Recipe just omit the stuffing mix and add in cubes of butternut squash – We tested in our kitchen and we loved both options!  Enjoy

If you know us – then you know Jake! He is our Jack Russell that we love so much. Since he is part of our family I will be making him a Thanksgiving treat. Using some of the turkey from dinner.

I have heard different stories about dogs and turkey. Jake has had turkey but I only give him a little at a time and he has always been fine. If you are unsure then only give a little at a time or use chicken for this recipe.

Don't we all love our Thanksgiving Leftovers!  We do in our house and we always make a soup which is always a hit.  Being Italian I love making a bolognese.  I love to add in some of the butternut squash to sweeten up the sauce.  To make this a paleo pasta dish use spaghetti squash which is what I do and it's so good!

Paleo "Corn Bread" Stuffing

Stuffing is my favorite side dish!  I just love to pour gravy over on Thanksgiving then use it multiple ways for left overs!  

What I love to do with my left over stuffing?

  • Make an open-faced sandwich with turkey, stuffing, cranberry sauce and gravy.
  • Turn stuffing into muffin cups.  Add in left over green beans, sweet potato casserole and chopped up turkey!  Of course, gravy...  We just love our gravy.
  • Bake in a sheet pan then cube - re-bake and use as croutons in your turkey soup.
  • Make a turkey pot pie and use your stuffing as the cover..

Paleo Apple Galette

Galette a French term used in various types of flat or round crusty pastry.  I love making a rustic dessert filled with fruit for Thanksgiving or when entertaining. 

Let the dough refrigerate for a minimum of 6 hours.

PS:  You will notice some fresh thyme in my dessert.  I had some handy and wanted to add some to the apples.  Go ahead be creative!

I knew when I received my new Emily Henry pie plate there had to be a new apple pie recipe.  I decided to make a crust for the bottom but top with a nut crumble.  Not sure why but it sounded good then topped with ice cream would make this Paleo pie the best one ever!
 
When you make the crust you do want to refrigerate it for at least 30 minutes to make it easier to work with .  The crust recipe will make 2 so you can either top the pie with it or save for another recipe.  Also, rolling out the dough with parchment paper does work really well.

This stuffing reminds me of my Nana’s pork stuffing.  She called it pork butt stuffing didn’t add bread to hers so I guess we enjoyed a Paleo stuffing!  This is my favorite way to enjoy stuffing but I am guilty of pouring gravy and topping with cranberry sauce.

I found the gourmet variety pack of mushrooms this past year and have been using them on a few of my recipes and it goes very well in this Thanksgiving stuffing. This can be made 1 day in advance and just warmed in the oven before dinner is served.

I was at our local grocery store and wanted to make a stuffed turkey breast for our lake neighbors but didn't want to debone and do any extra work.  I asked the butcher and he was more than happy to do the task for me.  How great is that!  

I wanted to share this recipe with you before Thanksgiving as not everyone wants to roast a big turkey!  

I included Gourmet Mushrooms in the name because there is a package of mushrooms called Gourmet Mushrooms.  They include shitake, oyster, bella

I was watching the foodnetwork and Bobby Flay was making this recipe and OMG it looked so good but I wanted to make it a little healthier so this is what inspired me.  I just LOVE shallots and OMG was this side dish amazing. I served it with my Stuffed Turkey and enjoyed this dinner with my lake neighbors and hubby.  

My husband pared this dish with our favorite Peju wine!

Cindy's Note: You can make the shallots up to a day in advance and just store in the refrigerator until you made the spinach and kale.  (that is what I did)

Thanksgiving Turkey

Turkey talk: If the turkey has been refrigerated, bring it to room temperature before cooking. Keep it in its plastic wrapping until you are ready to cook it. While in the refrigerator, and or while you are bringing it to room temp, have the bird resting in a pan or large dish, so that if the plastic covering leaks for any reason, the juices will stay in the pan/dish and not make a mess. If you are using a frozen turkey, you will need to defrost it in the refrigerator and it can take 3 days. Allow approximately 5 hours of defrosting for every pound.

Handle a raw turkey with the same amount of caution as when you handle raw chicken - use a separate cutting board and utensils to avoid contaminating other foods. Wash you hands with soap before touching anything else in the kitchen. Use paper towels to clean up.
