"After hours" Steak, Peppers and Onions Frittata

This recipe goes back to the days when I would go dancing at The Black Brimmer in Manchester, NH and after we would go over to The Red Arrow and order a steak and cheese omelet!  It was so good!

I decided to create a Paleo version and call it "After hours" I added a full red pepper, yellow pepper and 2 thin slices of beef.  This was amazing!  I actually drizzles some sriracha over my piece...  YUMMY...

There are so many ways to prepare flank steak and it cooks so fast you can have dinner ready in no time at all! I like to marinade for the day with salt, pepper, garlic powder and olive oil in the refrigerator in a sealable bag. Just heat the grill, prepare your salsa verde and this dish can be on the table in no time at all!

*CHEFS NOTE* Don't shy away from the anchovies as they make this salsa verde extra special and it does not have an anchovy taste, but amazing flavor addition. If you do not have anchovies then use 1/2 teaspoon of anchovy paste!

I am not a huge steak fan! Not for a reason for the beef it is more of texture thing with me. Kind of strange I know but it started as a little girl.

Enjoy my Grilled Skirt Steak over Summer Vegetable Salad!  This is great for 2 or entertaining!  You can also use the leftover summer vegetables and enjoy a lovely omelet.

If you enjoy cheese then add goat or feta!

Since we received the Big Green Egg a few weeks ago creating new recipes has been so much fun. My husband and I really enjoyed this Herb Marinated Grilled Flank Steak. You can use this recipe for so many creative meals. I love to just serve with several sides and enjoy fajitas or top with Roasted Tomatillo Salsa.

I found by cooking all of this dinner in one pot added so much flavor to the dish and prevented the grill from flaming or pieces falling in the grate!  Using my Cast Iron Pan made it super easy and I served dinner right from the pan!  How easy is this.........  Love one pot recipes and this one is Paleo too...

Glenn and I are not very big eaters and I don't go wow over steak (just me) but I go crazy over eggplant.  I did pick up 2 boneless rib eyes at Highland Park Market but we only cooked up one and save the other (wrapped and froze for another dish).  This was a perfect meal for the two of us.  For the bigger eaters - go ahead and cook up 2 steaks!

You can make the same amount of vegetables for 2!  You can also grill the steak on the grates.  We are just loving the cast iron pan.

When round 2 was a salad I knew this would be my dish.  I am not a big steak fan but on a salad with avocado then a side of spicy guacamole.  This recipe just had to take me to the 3rd round.  Thanks again to everyone who voted for me!

Every restaurant we have been to in Tuscany has their own version of a steak tartar topped with rocket salad. Rocket is known as arugula. A nutritious green leafy vegetable and very popular in the Mediterranean. I love using Rocket in salads or even cooking with them. I love when they are young and have just that slight peppery taste

*CHEFS NOTE* If you have difficult slicing the beef very thin, then place wrapped in the freezer for about 15 minutes then slice. If will be much easier to work with to create the perfect thin slices.
