This is a great stove to table dinner! I love using my Le Creuset Braising Pan for this recipe! Then of course adding fresh Parmesan cheese with my Kitchen IQ grater!

I used dried herbs in this recipe because I always have them on hand. If you have fresh just chop and double the measurements.

It’s Sunday and time to take inventory of my refrigerator and pantry as I plan for the following week.  I decided it was a perfect day for soup and had everything to create my Chicken Sausage and Kale Soup.

I was about to go grocery shopping and knew that I should have lunch first! Rule #1 eat before you go food shopping… I had all of these ingredients handy and it is cold outside so this was a perfect lunch for me!

I make this type of dish often to use up left over chicken and sausage or you can purchase fresh and sauté for this delicious Paleo recipe. You can also use zucchini if you have some handy!

The combination of chicken sausage, spinach, artichokes with herbs and garlic make this an amazing pasta dish for lunch or dinner.

I sometimes use spaghetti squash, our favorite pasta! There are also some great gluten free pastas available now!

Caponata is a Sicilian dish that was always served as an appetizer.  You can dice it very small and use a dip with endive leaves or prepare chunky.  It is a great accompaniment to many dishes such as a grilled swordfish or over roasted chicken.

We just love having friends and family over while we are at the lake.  My long time friend Pam and her husband Tom visited for the weekend and I want to spend time with them and not slaving over the stove but serving them amazing food.  I have known Pam since 1993 and I just adore her!  We did enjoy the weekend and the weather was just perfect.

This quiche was a big hit!

You can make my Italian Sausage and Mushroom Stuffing a Paleo Recipe by omitting the stuffing mixture. I love Olivia’s gluten free stuffing mix and only use 2 cups. They also have traditional and cornbread but either way we give their products a A+

To make this a Paleo Recipe just omit the stuffing mix and add in cubes of butternut squash – We tested in our kitchen and we loved both options!  Enjoy

I was in the kitchen making rice balls today and was thinking about another way to use the rest of the risotto. I just came back from the butcher and purchased hot Italian fennel sausage and put this dish together. Took it to a friend’s house and it was a big hit! The next time I make it I will add a little red pepper flakes to kick it up a bit. Other than that – It was amazing!! You need to try this Italian Sausage and Tomato Risotto!

It's almost St. Patrick's day and everyone (Irish or not) is looking for that four leaf clover and ready to make their favorite dishes such as corned beef and cabbage but I love this recipe all year round.  

Traditionally this is made with mashed potatoes but I love the paleo version by using mashed cauliflower.  It's really all about the pan gravy!  Just sayn'

Paleo Italian Pork Loin Roast

I love Sunday dinners in the slow cooker.  My Nana always made a Sunday sauce and I just loved when we had Pork Roast.  We would add peas to the platter and pour lots of sauce over the pork. This dish is amazing and is perfect for meal prep during the week.  I love to serve with zucchini noodles or sauté a bunch of greens.  

Note: Because I used a large piece of pork I asked the butcher to tie with kitchen twine. It just kept the roast together and made it easier to take out of the slow cooker and put on a platter.  Then grab a tong and fork as it just falls apart!  Go ahead and use your fingers to taste it.. I did...

Pasta, Sausage and Peas

I love my one-pot recipes and even though I needed a pan to boil the pasta there was no need for a colander nor a platter or bowl to serve the dish.  My beautiful pan served as a perfect serving dish! All of my dried herbs are from Simply Organic!

I used 2 hot and 2 sweet chicken sausage which added amazing flavor to the sauce!  You can also just add the frozen peas into the hot sauce!  This is a 30 minute meal perfect for a family of 4.  

When we enjoy pasta from a box there is only one I will serve my family (and myself). It has to be DeCecco Pasta!  

Tip: You can add in onion, peppers, zucchini or any other vegetables you have handy in the refrigerator.  Go ahead clean out that crisper draw and make this a hearty family meal!

If you love this recipe but don't want to use pasta!  Take a spaghetti squash and poke about 10 holes using a long metal skewer.  Put in the microwave for 10 minutes.  Let cool, slice, remove seeds then take a fork and add strands into the sauce.  Paleo dinner served...

I am a huge fan of Italian 30 minute - one pot meals and paleo recipes! I was at my favorite Italian shop in Hartford, D&D Market, and I saw the delicious sausages in the case and immediately thought about sautéing them with artichokes. Now that's Italian! For a side I roasted zucchini, roma tomatoes and red onion. It was a great dinner. **Tips below!

Sausage, Peppers and Onions

When I was a little girl my Nana would take us to the Italian feast in Lawrence, MA every labor day weekend. We would enjoy many Italian treats but always had to indulge in a sausage and pepper grinder. They were so amazing! I still love making sausage and peppers especially in the summer at our lake house. I can make a huge pan right in the oven and keep it warm while we are all out enjoying the lake and when we are ready to eat….. Sausage and Peppers are ready to go! It is funny to me how everyone lights up for this simple dish! You can take the left overs and make a frittata for breakfast or add to your Sunday sauce! The enjoyment can last for meals and meals!

The directions below show you two ways to prepare this dish! You can also make this on your outdoor grill. To do that I grill the sausage on the grill for about 12-15 minutes. Using a vegetable basket grill peppers and onions separately until they are soft and tender. Keep warm until ready to serve.

Modify this recipe depending on how many you are serving. I always make extra as they are great warmed up later or used up in other recipes!
