Basic Marinara

Basic Marinara

I normally double or triple this recipe and freeze them in individual containers. I try to make it basic then depending on the recipe I can add more flavors such as wines or chicken broth. When making a marinara/sauce remember that dried herbs hold their flavor and color when slow cooking. If you are using fresh herbs don’t add them in until you are finished with the cooking process and just before serving. If you have fresh tomatoes then use them starting with 3 pounds.

**Cindy’s Tip!: Use with your favorite recipe or divide and store in your refrigerator or freezer. **

Chicken Scallopine is one of my favorite dinner for 2 Italian Recipes! This chicken recipe is perfect for Valentine's day as you can prepare in advance and just let simmer on the stove with sauce. I like to add Fontina cheese but if you are following the Paleo diet you can omit!

Don't we all love our Thanksgiving Leftovers!  We do in our house and we always make a soup which is always a hit.  Being Italian I love making a bolognese.  I love to add in some of the butternut squash to sweeten up the sauce.  To make this a paleo pasta dish use spaghetti squash which is what I do and it's so good!

Today I wanted to use my new KitchenAid®Stand Mixer and was planning on making meatballs. Then I spotted the fresh ricotta, beef and veal at D&D Market

I love to add either parmesan or romano to my meatball mixture! It is so easy grating a block of cheese with my Kitchen IQ grater.

Sauté Cod over an Italian Sauce

You need to give my Sauté Cod over an Italian Sauce a try! I was not sure what to call the sauce but it is amazing. To make this sauce I started taking out ingredients from the refrigerator and pantry! This recipe follows the Paleo diet and is a delicious Italian dinner for any weeknight or entertaining.

I used cod loin because it is thicker and I wanted a nice piece over the sauce on each individual plate.
