You can also prepare this dish gluten free by using GF breadcrumbs. You can also prepare this as a paleo recipe by using almond meal and adding more dried Italian herbs for the same great taste!

I am really working on staying on track for 2016.  I joined a new gym down here in Florida and it's called Hard Exercise Works (HEW) and I really love it.  It's very similar to my CrossFit workouts and the energy is just amazing.  Another great think about my new gym is it's next to a Fresh Market which I just love and so many other healthy markets.

While walking through the market starting from the produce everything looks fresh, bright and I wanted one of everything.  I started with the fresh greens which was a combination of baby spinach, baby kale and mixed greens, then I saw the fresh mushrooms, asparagus and cherry tomatoes.  I walked over to the prepared section and their tuna looked perfect.  Of course, I was offered a sample and immedialty asked for 1 pound of tuna.  You can make your own but I felt great with the short cut!

You can sauté up any vegetables such as zucchini, red peppers or even eggplant would be a great addition.  I will be grabbing those next stop!  I did make my own dressing so easy and perfect.  I will be using the leftover dressing for a marinade during the week!

I love summer vegetables and especially grilled then drizzle balsamic vinegar.  This makes a great salad for your next Paleo Picnic.

Cindy's Important Tip:  Be sure to take the time after you slice the eggplant and zucchini to salt and let sit.  I like to layer with paper towels and top with a pan for 20-25 minutes. This will drain the moisture from the vegetables and allow them to grill perfectly.

This is a nice and hearty salad that can be topped with your favorite protein but I do hope you try it with my beef and broccoli dish.  Super delicious...

Cindy's Tip:  Cut all of the vegetables the same size.  I like them in mini cubes!

I love a salad with dinner and decided to make something a little different. I created this Lemon Zucchini with all ingredients I had handy in the house.

Especially with all of the zucchini coming out of my salad. I sauteed up 2 zucchini and set aside one for my breakfast the next day. This was so yummy that by the time the platter came to me it was almost gone! A good side of a yummy salad..

I love using my Kitchen IQ grater to prepare my Parmesan cheese! Enjoy
