This recipe was inspired when my girlfriend Diana came to the lake for the day and we always have fun in the kitchen.  I was at our local butcher Stearns getting filet mignon for my son Steven.  (Yes I know he is still spoiled) I saw the pork on the counter and the butcher cut several pieces for me fresh.  Their meats are awesome and everyone is always helpful and happy!

Anyway Diana and I started mixing these spices together and realized we were making Mole!  The flavors made this amazing fresh pork another level of perfection that we all enjoyed.  

This paleo recipe is perfect for pork or even chicken!  Go ahead it is so easy and the cocoa really bring the flavors to an amazing level.

Mussels are common for an appetizer or a snack.  My Nana would make a pan of mussels for a late afternoon meal.  Most Italian homes have food going all day and this easy dish is perfect for friends around the table.

I found by cooking all of this dinner in one pot added so much flavor to the dish and prevented the grill from flaming or pieces falling in the grate!  Using my Cast Iron Pan made it super easy and I served dinner right from the pan!  How easy is this.........  Love one pot recipes and this one is Paleo too...

Glenn and I are not very big eaters and I don't go wow over steak (just me) but I go crazy over eggplant.  I did pick up 2 boneless rib eyes at Highland Park Market but we only cooked up one and save the other (wrapped and froze for another dish).  This was a perfect meal for the two of us.  For the bigger eaters - go ahead and cook up 2 steaks!

You can make the same amount of vegetables for 2!  You can also grill the steak on the grates.  We are just loving the cast iron pan.

You have heard about the cottage pie and shepherds pie and these two recipes I prepared with sweet potatoes.

It has been really cold here in Connecticut and I have been cleaning out my freezer and creating new recipes. Using 2 heads of cauliflower to create this yummy crust to surround ground turkey and vegetables in a thick chicken stock made this a great dinner.  I also love that using my beautiful braising pan it was perfect from the stove to the table!  Also, I am going to show you how to make this in 1 pot!  Enjoy

Paleo "Corn Bread" Stuffing

Stuffing is my favorite side dish!  I just love to pour gravy over on Thanksgiving then use it multiple ways for left overs!  

What I love to do with my left over stuffing?

  • Make an open-faced sandwich with turkey, stuffing, cranberry sauce and gravy.
  • Turn stuffing into muffin cups.  Add in left over green beans, sweet potato casserole and chopped up turkey!  Of course, gravy...  We just love our gravy.
  • Bake in a sheet pan then cube - re-bake and use as croutons in your turkey soup.
  • Make a turkey pot pie and use your stuffing as the cover..

I have a few Stuffed Cabbage recipes and links are provided below.  This recipe was inspired by the lonely cabbage left on the shelf at the farmers market, ground turkey I already had in my freezer and the 2 cups I reserved from this recipe.

When I make a baked dish like this I always take a moment to decide how I want to serve it.  I just love my Emile Henry baking pans.  They are great from oven to table!  Just wanted you to know that!  xo

Before we left to head North for the summer it was time to clean out the kitchen.  We were planning a day on the boat and I decided to make these Paleo Almond Butter and Jelly Bars.  Paleo OMG these were amazing.  There were a few left over and my sister and I enjoyed them with our coffee.  So GOOD!

Note:  I did put them in the refrigerator in bars after they cooled for 30 minutes as it made it easier to cut into square.

It's almost the end of the season for us at the lake and with us moving to Florida I really want to clean out the refrigerator.  I will be using up what I have over the next few weeks and this morning I found 2 bags of frozen blueberries.  I normally use them for my smoothies and this morning I wanted pancakes.  I love pancakes but don't always want to stand over the stove flipping them. 

This morning I decided to make one in my cast iron skillet and OMG I was in Paleo heaven!  I did drizzle local maple syrup and now I am a happy person ready to start my day.

Another one-pot recipe perfect for your family!  Just carefully bring the skillet to the table and slice to enjoy together.

Chicken Cordon Bleu is a thin breaded cutlet with ham and cheese rolled inside.  I love this dish because it's perfect for 2 or 6 or 8.  You can get these prepped in advance, store in the refrigerator and when you are 35 minutes to eat just bake and serve.

Glenn and I are on vacation!  Well kinda..  We just bought a house in Florida and are doing some work to our new house and staying at a friends enjoying the weather and each other.

I am not a big chocolate fan but for some reason baking these came to me and this is what we enjoyed while watching TV sitting outside enjoying the weather.

I hope you love this Paleo dessert or anytime snack!  They go great with an afternoon cup of tea or coffee.

This made a perfect dinner for me!  I added zucchini noodles, frozen petite peas and left over rotisserie chicken for a perfect dinner!  I just added directly into the alfredo and because I can - I sprinkled a little fresh romano cheese!  I can't help if - I am Italian....

This recipe will serve 2.

Cindy's Tip:  If you don't want to boil the cauliflower just cut up into florets and place in microwave safe bowl.  Add about 1/2 cup of water and set on high for 6-7 minutes. Carefully remove and drain.

You can make these a lot neater then I did.  I actually ran out of flour so I was struggling a little but the clear wrap helped a lot.  Go to youtube and search for fig newtons and they will show you how to roll the dough.  I used a clear wrap on the bottom and the top of my dough.  It made it a lot easier to roll.  I can't wait to make these again!

I have been thinking about apple german pancakes and decided to experiment this morning! I have to say it was a success... If you don't have apples you can also use a sugar free apple mixture from a jar. This is a great paleo recipe and gluten free for everyone to enjoy!

BTW - I love using my cast iron pan for these amazing pancakes!

This recipe was so fun to make because I had 1 sweet potato on the counter and 1/2 of a red bell pepper.  I love the flavors of the sweet potato in the recipe and we are just loving this fresh haddock from our friends at City Fish!

I made a baby kale salad to serve these Paleo Haddock Fish Cakes!  

Cindy's Tip!  If you are picking up haddock grab a little more and cook it up then save for another meal.  The work is already done and all you have to do is  make the cakes!

I am working on several recipes that use mayonnaise. I did a few tests before there was one that tasted well. This was a project. I went through a lot of good olive oil to get this right, but the next time I make it I plan on using avocado oil. Since it is so expensive I wanted to get it right first as I was in my test kitchen. This is a great paleo recipe or gluten free recipe! Once you make this, plan on using it that week. Therefore, plan your recipes first. I read that it is good for about 7 days but I am going to try and use it within 5 days!

Every Italian gets excited when Arancini's are being served.  I used to make them with my Nana and dip them in tomato sauce.  Or we would serve with sauce at the bottom of a bowl then the arancini on top.  

You can add you favorite filling such as peas, meat, or your favorite combination.  Using wild or cultivated mushrooms really makes these arancini's even more amazing!

I got a big bunch of scallions at our local farmers market and decided to make my cabbage and cauliflower fried rice.  I have been stocking up on Bob Mills Paleo Baking Flour and decided to give this a try.  

Just something for you to remember when making these!  You know when your watching the grilling cooking shows and  the Chef always says "let the meat talk to you"  Don't flip until the meat is ready.  Do you know what that means?  When you are moving your spatula around the pancake be sure not to work it too much.  When it's ready to flip - the pancake will let you.
