I just LOVE chia seeds and making pudding.  Together this is a perfect Paleo snack anytime! Just shake it all in your jar, cover, refrigerate overnight and enjoy!  I love to add a spoonful of almond butter on top.  Go ahead and try it!

We grew up enjoying warm rice pudding for dessert.  My Nana loved keeping it warm on the stove for us and for he too!  It was one of her favorites and my our family still gets excited over warm rice pudding.

I decided to try a Paleo version and was very surprised by the similar texture and flavor.  I use cauliflower in many of my recipes such as risotto, paella, arancini and even pizza crust.

Espresso Vanilla Chia Pudding

OMG Yum Yum Paleo Recipe

I am addicted to this pudding!  I love adding just a teaspoon of instant espresso.  Feel free to omit and add a little cocoa powder if you want!  I love putting in a large canning jar then just shaking in the morning and sharing with hubby or it makes a great afternoon snack.

I have also made this same pudding with a scoop of vanilla protein!  You will notice I did not add a sweetener.  I don't think it needs it but feel free to add honey or agave if you prefer!

Tip:  I am also hooked on making my own nut milk.  I will share the recipe with you!

To make 1 quart you will need 1 cup of raw almonds and 4 cups of water plus more for soaking.

In a pitcher add almonds and fill with about 4 cups of water place in the refrigerator overnight.  The next morning drain the almonds and rinse well in a colander.  Add the almonds and 4 cups of water to your blender and puree.  Strain the almond milk through a fine mesh strainer to grab onto any nut pieces.  Pour into a container (that covers) and refrigerate.  The milk will last for 5 days!

I just love my Le Creuset Pumpkin Cocotte's and they are just perfect for this dessert!

Paleo Yorkshire Pudding

My kids, my friends and everyone else in better love my Paleo Yorkshire Pudding! The perfect side to a roasted chicken, prime rib or what ever your little heart desires for those happy faces at the dinner table!

The best way to do this is – adding the ingredients in your blender; let it sit for 10 minutes or until your oven is preheated.  Remember a few basic rules about making yorkshire pudding or popovers.  Sorry – but yes there are rules!

I was told a long time ago that there are three criteria for successful Yorkshire pudding or popovers

  1. You must be in a good mood
  2. Do the dance before you pour the mixture into the pan
  3. Do not walk in front or open the oven door while cooking

When I made my second batch I put in small canning jars so after my Crossfit workout I just gave the jar a shake, sprinkled extra cinnamon and added pumpkin seeds. yum… Now off to start my day…..
