Lamb Chops wrapped with Prosciutto

These make a perfect appetizer for any occasion. This is a quick yet gourmet appetizer to really dazzle your guests! If you can't find lamb chops ask your butch to cut up a rack of lamb into individual chops. They will gladly do it for you! You can assemble the chops in advance and keep refrigerated until ready to grill.

*Cind's Note* To finely mince garlic, after you peel and chop your garlic continue to finely chop. Take a pinch of sea salt and sprinkle on the garlic. Take the flat edge of your chefs knife and press firmly down to the garlic and rub on the board.

Paleo Italian Hero

My nana would make a large Italian sandwich for lunch on weekends. She would call it an Airplane- I'm not sure why but it could be because she made enough to be able to serve a full airplane of passengers! We also call this sandwich a hero when it is individual. This was a recipe that I just started to put together with items handy in my pantry.

*CHEFS NOTE* I suggest you enjoy these upon making them. I noticed that one had hardened after sitting on the counter for a while, but I put it in my food processor and created bread crumbs for my chicken parmesan! How brilliant was that?

Veal, Spinach and Fresh Herbs Meatballs

Weil, if you know me then you know Sunday is Meatball day at our house.  I just love the smell of meatballs and sauce simmering in my kitchen all day!

I made these in a spicy sauce!  So yummy....  I will share my spicy sauce at the bottom of the recipe.

Enjoy~

PS

I always use at least 2 pounds of meat when making meatballs for left overs!
